In today's weird little video, I recreate Emma Chamberlain's PBJ from scratch. Full recipe below.
Bread Recipe:
250g Strong Bread Flour
5g Salt
3.5g Yeast
175g Lukewarm Water
2.5ml Olive Oil
Put flour in a bowl with yeast on one side and salt on the other side. Mix yeast on its side, mix salt on its side, pour in the water and mix it up.
Tip it onto the worktop and knead for 10 minutes.
Cover bowl in oil, then add/roll dough. Cover bowl with cling or towel and leave for two hours.
Knock dough back, fold it under itself and then put it on a grease proofed baking tray. Cover with a towel/proving bag and leave for two hours.
Preheat (fan) oven to 180. Slash the top of the dough, put a tray of boiling water in the bottom of the oven for steam, and bake for 25-30 minutes.
Jam Recipe:
200g Fruit
135g Jam Sugar
35ml Water
5ml Lemon Juice
Put a plate in the freezer.
Tip blackcurrants into saucepan with water. Bring to the boil and simmer for 5 mins until fruit has broken down to chunky pulp. Leave to cool slightly. Add sugar and lemon juice and heat gently until sugar is dissolved.
Boil for 10 minutes, remove from heat and spoon some jam onto the frozen plate. Leave it for two minutes then push with your finger. If it wrinkles, the jam is ready, if not, re-boil for two minutes and try again.
Once its ready, remove from heat, skim off any froth, cool for 15 minutes and then add to sterilised jars (to sterilise jars, wash with soapy water and then place in oven at 120 (fan) for 15 minutes).
Peanut Butter Recipe
200g Roasted Peanuts
Dash of Oil
Sprinkle of Sweet Cinnamon
Sprinkle of Sugar
Basically just blend it up until it looks unappetizing...

In the US we have both jam and jelly. The jelly is smooth, made from the juices, and the jam has chunks of the fruit, so better quality and a bit more costly. I'm excited to watch this video!!! I know I will be jealous of that sandwich. 🥰🥰🥰

@bonniepwtf, I suggest looking for store-bought peanut butter that has just peanuts and maybe a small amount of salt. Also, I prefer chunky peanut butter for a more "rustic" feel. That should get you pretty close to what George is making from scratch.
A lot of commercial peanut butter has other oils as fillers and a variety of emulsifiers. That results in a more homogeneous product that doesn't separate. But it means you are probably eating a bunch of ingredients you didn't mean to eat that day.
In America, we have jelly, jam, and preserves. Jelly has no seeds or pulp. Jam has seeds and pulp. Preserves have seeds and pulp, and usually larger pieces of fruit.

For the bread: you can make the full amount, slice it up and freeze the slices. Depending on the type of bread you can then either put a slice in the toaster or just let them defrost at room temperature for some time.

Frozen bread is great after toasting! Crisp on the outside and soft on the inside..... rather like fresh bread that has been toasted over an open fire.

I have to make gluten free bread and I make a double batch, slice it and freeze it right away. It has no preservatives so would go bad fast.
Fun video! If you ever plan to freeze fresh berries or fruits again, try placing them on a tray individually to freeze for about 30 minutes, then put them all in a container so they don't stick together in one whole clump 😃

Tip for the bread: slice it and freeze it, to eat it, stick it in toaster and it's like fresh! That way you can make a regular loaf of bread and eat it at your own pace

I love bread and also make my own at home. For storage I keep in in the fridge and it can be stored there for quite some time. May be about two weeks or so. I found that homemade bread doesn't go bad as quickly as the store bought ones.
Stale bread is also perfect for French toast/eggy bread!
I live alone and love fresh bread but can never finish a whole loaf before it’s hard enough to put through a window. French toast with bacon and syrup is my fav weekend treat.
George I find that your videos are always calming. I’m not sure it would matter what the topic is. You have a storytelling gift. You’ve just made making a peanut butter sandwich a delightful experience to behold.

We call it jelly because we strain the seeds and pulp until it’s very clear before making it into a jam like spread. If we don’t strain it we call it jam.
nah, at least when store bought - jelly is defiantly more Jello like vs jam which spreads like soft butter or thereabouts. Also, usually when seeds and stuff like that being left in get labeled as preserves.

To make your peanut butter a little more appealing looking (especially if your peanuts are really dry) while blending it, get a small container of peanut oil (you should be able to find it online), and using a small amount of it (it will help with smoothing, but also adds more of a peanut taste, and also use a tiny bit of light (not dark) corn syrup instead of sugar to sweeten your peanut butter a bit...this may "smooth" it's texture, and look, or it may not work for you, but try it. It may be excessive to other people, but I always butter the toast before slapping on the peanut butter and jam. Just gets more oozy and gooey and rich. Of course, a mug of tea should be at hand to swill the food around and ease swallowing.

Thanks for this wonderful encouragement! I’m quite literally taking a break, resting the dough of my fourth attempt at a ciabatta in two weeks. Each one before unfortunately failed in some way or another. I decided to reframe each inedible disappointment as a small victory because I’ve slowly learned something new. Tempering expectations removes the pressure and lets you enjoy the journey again.

I'm allergic to peanuts, so this was a good contact with them, LOL! Your bread looked delicious, and so did your jam. When I freeze berries, I spread them on a baking sheet in the freezer first and then package the frozen berries. That way they don't stick together in a frozen lump. Thanks for an entertaining vlog!
George, in America, we have jam, jelly and Jell-O, and they are all different. However, our jam and the UK jam is the same, and jam is better for you than jelly. ;) Keep up with the great content!

In general, and given your heritage and surroundings, I would very much appreciate every from scratch video of this quality.
I wouldn‘t expect you to have a hearty breakfast of kedgeree or black pudding every morning, but breakfast for dinner, something with leek, you foraging in the surroundings, taking us to the hunter/butchers/fishmonger‘s, you copying your mum‘s secret Sunday Special or Grannie’s pancake/pie/porridge recipe … guess what, I would excitedly comment on everything.
From scratch cooking allows me to replicate - something I can not do if some Canadian cooking channel does Mexican fajitas with Costco Green Chili sauce, a pouch of spices and a frozen fish I would not find anywhere in Europe!
From scratch cooking enables me to adept to simple local alternatives!
Btw, have we all told you already that your voice over is just as relaxing as those „a-river-gently-running-through-a-sunny-glen“ videos?

Hey there! Jam and Jelly are the same in the US except that Jelly is strained so it contains no seeds and no large fibers. It is a beautiful clear, sweet topping just as jam is sweet but may contain seeds and fiber from the fruits. The gelling element is pectin cooked with sugar and at temperature. Jello is a brand name for a chilled dessert made with gelatin, sugar, water and flavoring. Jellos with additives of whole fruits and vegetables and spices or cream or cheese are popular at church suppers or community pot lucks. Jelly is a lot harder to make so is much less popular with modern home cooks which is why it isn’t seen so much since the 1950s or so when housewives headed back into the workplace.😊
In the US, fruit spreads may be jelly, jam or preserves depending on the ratio of whole macerated fruit to juice (and I guess some other variables). What you made we would call "preserves" not "jelly".
I live in Tennessee grew up in Southwest Virginia and one of my favorite ways to have peanut butter and jelly is to make it with peanut butter , Strawberry preserves then you sprinkle brown sugar over that and toast it. Butter the bread both sides and fry it up. Southern Appalachian way to have it

Over here in the US - jelly is somewhat Jello like (like half-way there), and jam is stuff that spreads like soft butter. That said, I think a lot of the time over here people just say jelly for all of it, for whatever reason - I guess because it's called "people butter and jelly" even if you never actually use jelly.
Actually if you make preserves here in America there is a difference, fruit jelly has the seeds and possibly the fruit skin taken out (as grape, blackberry etc jelly) and jam has the seeds and maybe the skin depending on the fruit still in it. What we call "Jello" is a national brand name of a fruit flavored gelatin. I think the original PB & J sandwich referred to grape jelly (ugh!) which I would replace with raspberry jam.
I notice George didn't add pectin. Also, if he had made a large volume, he might have used a hot water bath to process & seal some jars for long term storage. But one jar will keep nicely in the fridge for a week or two.

So in the US we make jelly from the juice of fruit, and jam is made with fruit with the “flesh” and juice of the fruit. You can put it through a food mill to remove the seeds. I find your videos very entertaining.

Hello George, I just wanted to take a moment and say that I love your videos. They always feel like a warm hug because of how comforting and cozy they are. Thank you for your unique content that always puts a smile on my face. The whole vibe or aesthetic you’ve got going on in your videos and your lifestyle in general is something I hope to achieve myself when I become more stable in my adult life. I’m only 21 but I’m slowly but surely trying my best to find my way, starting by learning to cook with my grandmother. I realized that the earlier I start with such simple yet important things, the more comfortable I’ll be able to feel later on. I still wish I learned earlier but life stuff happened, but better late than never (and still as early as it is quite necessary). Much love to you and that sandwich looks incredible!! It’s hard to articulate what I want to say, but basically I really think you have an element of genius. The combination of the topics you discuss , with the video clips etc, is so very creative and skilful. I know you’ve talked about being anxious before, so I just wanted to say that I hope you’re confident about your work because you really should be! That looks delicious. Here in the US we would actually call that jam. When a spread is made by cooking down whole fruit we call it jam and we make jelly out of the juice of fruit with pectin added for thickener. Jelly has no seeds or texture like jam does. In my last house I had lots of fruit growing and I made jams and jellies out of tart cherries, apples, raspberries, grapes, blackberries, strawberries and gooseberries. We had to move and I miss that fruit.

Patchy, To do an installation with your LED cabinet light strip that won't blind you try putting the light strip on the bottom side of the cabinet toward the front edge of the cabinet. With The LED's shining down on the counter top, then hide the LED's by mounting a small piece of white molding on the front of the cabinet underside. I think you would be much happier with indirect lighting as no one like staring into the Sun.
I think you will be quite successful after hearing the approach you are taking with your channel and your life in general.
I have an example of something that I slowly became quite good at. For twenty years I had my own business and I was asked to do speaking engagements and training/motivational talks. I was quite nervous at first, but I did get a coach to do a bit of training once or twice. I also set small goals each time to improve myself. I was just happy to get through some of the talks in front of hundreds of people. I stood behind the lectern, like a preacher. But I felt like a talking head. The next time I had a large audience I decided I would stand beside the lectern and glance at my notes beside me if needed.
My next step was to have a table set in the middle of the stage. No lectern. I walked back and forth across the stage, slowly, glancing at the notes on the table as needed. I finally arrived at the day when I was speaking in front of thousands of people and I felt just the smallest flutter in my stomach. Stretching your comfort zone is a great way to learn new things and have more fun in life!
PS The company I worked with finally got teleprompters, ha ha... but by then I didn't really need them!
I loved this video! As a child, butter was pretty much my ONLY food group! Growing up in “New Scotland” (🇨🇦) jello is jello, jam has the pulp and seeds in it, and jelly is a clear version with the seeds and pulp strained out of it. Jelly has all the flavour without the seeds to get caught between your teeth. Win win!
