    Afang soup is a delicious Nigerian dish made primarily with Afang leaves (wild spinach) and waterleaf. Here’s a simple recipe to guide you:

    Ingredients
    Protein: assorted meats (beef, goat, etc.) or fish
    Afang leaves: finely chopped or pounded
    Waterleaf: chopped (or substitute with spinach)
    Palm oil
    Ground crayfish
    Smoked fish
    Ground pepper
    Seasoning cubes
    Salt (optional)
    Stock: from the cooked meats ( for more flavor)
    Instructions
    1. Prepare the Meat:
    Boil your assorted meats with chopped onions, seasoning cubes, and salt until tender. Save the stock for later.
    2. Add Palm Oil:
    In a large pot, add the palm oil to the cooked meat and allow it to heat for a few minutes.
    3. Combine Ingredients:
    Stir in the ground crayfish and pepper, then add the stock (if using) for extra flavor. Allow it to simmer for a few minutes.
    4. Add the Leaves:
    Introduce the waterleaf and stir for about 2-3 minutes until it wilts. Then, add the finely chopped Afang leaves and mix well. (Don’t forget to add your palm-oil in stages)
    5. Cook:
    Let it cook for another 5-10 minutes on low heat, stirring occasionally. Adjust seasoning as needed.
    6. Enjoy:
    Serve hot with your choice of swallow (fufu, pounded yam, etc.).
    Tips
    Adjust the quantity of leaves according to your preference for a thicker or thinner soup.
