I think Beijing's 2008 Opening was way ahead of its time. There's simply no other openings that can surpass it, not even its own when it hosts the Winter Olympics in 2022.
Athens 2004 also had certain technical elements that audiences may not directly see but were also way ahead of its time such as draining gallons of water in a mere 2 minutes to a dry surface and the laser water screen that projected a spinning dna double helix.
Athens 2004 always my favorite. I watched it from Opening to the Closing. I was very impressed & in awe. Especially to have witnessed the Olympics at a conscious age- 16 at time. Before then, I'd only heard of the Atlanta Games & glanced the Sydney Opening Ceremony. Beijing was impressive as well, in my top 3.
Honestly, the most incredible part of London 2012 was the massive display of their history they pulled off with some of the most badass music I've ever heard. And in the same city, 1948... it was the Scouts who led the way. Nobody could be more fitting for a new, international era. Youth who hadn't fought the last war, all part of an global organisation focused around cooperation and self-improvement.

Barcelona 1992 definitely had the best cauldron lighting not only because of the epic bow and arrow shot, but also they got a Paralympian to do it too! Antonio remains the only Paralympian to light the Olympic cauldron. He deserved an honorary Olympic medal for that incredible feat, on top of his Paralympic medals

Nobody could beat Beijing 2008 one. The country freak me out. They hold the events regardless of the cost. London felt huge pressure. Admittedly, it was amazing.
Beijing was the best in the Opening ceremony as well as the closing ceremony... It gave us Indians hope that we can win more than a single MEDAL in the Games. And wow, an Individual Gold Medal for India as well. Beijing was the start and best ever performance by India in the Games. Hopefully we can surpass it by winning atleast 2 Gold Medals and reach double digits in total....

I would say the olympic openings and closings from 2000 up until 2008 I would say are mind-blowing. After the 2000s, pretty much it's been less spectacular as I got older. However, with the paris olympics occuring nearly 100 years after it was once hosted in 1924, considering two of the greatest athletics in track and field at that time which inspired the 1981 film Chariots of Fire, that has to be something special and a honor for paris, france to host it again on the same year as it occurred back in 1924.

Regarding the lighting of the Olympic cauldron, I think the most iconic was Barcelona 1992, however I consider that the most spectacular due to the scale of production and effects was Sydney 2000.
