9:54 - This has been confirmed by the shows author, the seance brings back it’s target (Toji Zenin) in the prime of their life/peak strength. Toji Fushigoro had been retired for several years after having a family but started back up after his wife died. So in short, the Toji we see here is a different beast than when he beat Gojo and Geto.

About why they showed the curse users in a flashback. While it was spelled out last episode that Gojo being gone would bring curse users out of the woodwork, this episode showed us just how depraved those curse users Gojo kept in check really are. So yeah this pretty much shows us how BAD things could be if they don't retrieve Gojo's seal.

The Toji that the granny resurrected is actually stronger than the one that fought Gojo and Geto. I somehow just found this out recently but the Granny has to refer to him as Zen’in because that’s when he was at his peak, likely before he met Megumi’s mother.

Zenin is his birth name, so she has to say his birth name for the seance.

Yuki talking about him with geto in premature death refers to him as a zenin too , so does the guy in ep 1 of hidden inventory.

You're right about them resurrecting Toji from when he was a Zenin rather than a Fushiguro. This is because he was at his peak when he was a Zenin & subsequently became rusty as a Fushiguro (remember he said he was remembering how to kill against Gojo in Hidden Inventory).
Secondly, Toji isn't fully back as himself. His power is just being used by the guy that swallowed his bone. So, basically, that's not Toji, just his body.
