    I like them both now in my Cole Slaw
    Dressing 1 /2 lemon squeezed
    Avocado oil
    Garlic salt
    Frozen baby peas
    A splash of Medium salsa
    Quite satisfying and you can eat till you are full.
    I use 1 or 2 red baby 2 inch tiny potatoes as the side dish. This makes a delicious Satisfying meal.
    It’s very healthy and helpful if you are on a tight budget. 😊

    I got into a rather heated discussion about cabbage with a relative in which we both make Chow-chow. This is very popular in the southeast where we are from. It's somewhat of a slaw or relish with cabbage being the host ingredient. I want to thank you for your breakdown of the two. I've been making my recipe with both red and green which apparently goes against my relatives traditions and for that I am treated like I kicked their dog. Great channel and I love your hat.

    Oh my gosh, I can't believe I just found your channel.....Love all of this. I will be watching everything. I'm an old retired nurse, and this is what I love to watch. Going next to the fermented cabbage and other fermentations you do. I'm just starting this so I hope the instructions are simple to the point. Somehow I believe they will be.....Just from the picture on the fermented cabbage, are you doing the green and not the purple? I see most people are doing the green and wonder now with the value of the purple cabbage why they are not doing it. Thank-you!!......Sherry

      Hi Sherry, Thank you for watching my videos! The reason why I personally (rarely) ferment purple is for cosmetic reasons. It ferments into a gray color and also stains my teeth grayish-blue due to the dye being pulled out of the cabbage into the brine. That's all, still plenty good to eat if you choose to ferment it!

    I have over the past 4 months been eating sauerkraut regularly but had no idea the red cabbage fared so much better than green. I plan to switch to red sauerkraut from now on while using green periodically as well. Thanks for this very informative video.!

    Hi and thank you for this. I just ran across your video and I am a huge raw food convert and have gotten annoying to all of my friends and family so I'm very happy to have found you :). You say you read all of your comments so here are two comments I have for you.
    First comment (and I’m just being a smart ass here) ... in the amino acid profile you mention that purple cabbage won out in all categories, but in fact the one amino acid where green cabbage wins is proline according to your numbers. You can mop the floor with me when it comes to discussing nutritional profiles - it’s just a funny quirk I noticed when watching your entire video.
    Second comment is I’m wondering why you are growing mostly green cabbage instead of purple cabbage if the purple is the more nutritionally dense. Just curious! I tend to eat both at the same time as I never knew the nutritional differences until I watched your video and I wanted to cover all the bases just in case.
    You are awesome for what you do and how you live. I’d love you as a neighbour that is for sure. If you don’t respond to this that’s still cool. I’m just sending you an early wish for a great Christmas. ☃

    Please do more of these on all categories of food: legumes, whole grains like oats and Ezekiel bread, nuts like pistachios, macadamia, pumpkin seeds, sunflower seeds, etc. these are sooo helpful, thank you! Also do you know which grains are low in oxalates? ❤❤❤ you are amazing! 🤗

    I just found your channel and this was the second video of yours that I watched. I loved the in depth breakdown. I didn't realize that there was such a difference! One thing I am thinking of, is that vitamin K is hard to come by and something I need in my diet. Yet I don't think it is enough to warrant buying the green over the red.

    Okay I made it to the end, great video thanks again. I do a cabbage, kale and beat root dish I eat as a side with pretty much every meal. Growing up my father owned a wholesale produce company so we always had an abundance of fresh produce. Red cabbage was a staple in our house and until I hit 40 years old I never weighed over 135 pounds. 4 kids later, very busy life style, a life of cluster headaches (unfortunately on steroids for that), I just lost track of my healthy diet. Result of all that made for a rapid weight gain and a year ago I topped off at 203 pounds. Last year now that all my kids are grown adults I realized I needed to focus on me some. I started a healthy diet again, focused on personal training and got down to 170 in 2 months but life had other plans and I lost track yet again. Now all that is behind me and after many years have a garden going, have my diet under control, and have lost 28 pounds since Feb. 1st. I have been fine tuning my diet for the last month and it's why I am here. Thanks yet again, and sorry for the long winded comment.

    1. You have red & green cabbage, which would you make sauerkraut with if you had to choose?
    2. As above, which for Cold Press juicing.
    3. Which for general fresh salad
    Remember you HAVE to choose only one for each 😁

      1. I do green because the purple turns my teeth blue due to the purple coloring. So brushing teeth immediately after eating is necessity after purple... I'd rather not worry about teeth staining so I go green.
      2. Green for juicing for personal preference.
      3. Red for fresh raw salads. No teeth staining like with the fermented and juiced red cabbage!

    Hi. Red cabbage did not have higher amino values completely across the board as green cabbage has higher proline based on you figures of 48.1 green cabbage vs 42.7 for red cabbage. Thanks for the best fermenting food content on UA-cam. Very clear presentation and great subject matter. A plus that you're so enthusiastic as well! I've been a keen homebrewer for years so am fascinated by all things fermented. Am enjoying seeing my wife's poor health, she has myalgia encephalomyelitis (ME), get noticeably better after I started making sauerkraut and giving to her. Intermittent fasting may be helping too.

      You are the BEST! I have been enjoying my new Lacto-coleslaw habit! Q: I find mine is often not making enough liquid - could it be my cabbage is “less fresh”? Or do I need to add more salt? I use. I use a coffee filter, and then loosely cover each jar with a screw top after the third day or so… but the juice evaporates, and although it ferments, it is too dry.

    The saying, "You are what you eat" should more accurately be, "You are what you eat, ate"
    For the results to be accurate both varieties of cabbage had to have been grown in the same soil, and under identical conditions. But yes, generally the brighter and/or darker coloured fruits/vegetables are nutritionally superior.
    I often make sauerkraut with a mix of green and purple (red) as I love the colour of the purple. I will try adding some ginger as you suggested! Nice videos......

    I am a new fan of your videos. Yes, this was a very good video. My real takeaway from the video and especially the one on seeds is the importance of variety in one's diets. For example, one seed was higher in some categories while weaker in others.

    A year later and just like Sandra below me,found you by chance and gotta say, you've my utmost respect and admiration, sharing your knowledge on how to ferment cabbage with chopped carrot and ginger, first video I saw, and you mention there this video about Cabbage Nutrition facts, so here I am and amazed that the Purple won 1st.place over the Green cabbage. Question: I just started juicing cabbage for my mild but chronic GERD - which cabbage works best specifically for GERD or are they equally beneficial? I like the taste of red better but if green works faster and better, than I will juice green. Most of the video and studies I've read about juicing cabbage for stomach ulcers use green. Any information is appreciated. Thanks!
