    I love canned celery, it's so versatile! Ever need a cream of celery soup & don't have time to run to the store? Make a white sauce and make your own, it's much better than store bought. (side note: I love hearing you "blabber"! You bring such joy to me!)

    I'm watching this video in March of 2021. I didn't go through the east coast power loss but I did go through 6 months without power after a category 5 hurricane. Unfortunately at the time my pantry was destroyed and I lost 95% of my canning jars which were all full at the moment.
    It was just heartbreaking 💔.
    Because we were hit by a previous category 5 hurricane🌀 3 weeks before and were without power for 2 weeks I had canned everything in my freezers so it wouldn't go bad.
    I'm working to have enough jars to can what we have in the freezers in case it's needed, plus filling my shelves. Buying them again has been a complete nightmare but I'm steady working towardsreaching my goal. Long way to go still.

    Heather, thank you for your Joy! I have been watching your canning videos all day. I have been in a little bit of depression and I have been feeling overwhelmed by..."Everything...lol" and hearing your voice and seeing you taking such care with the food that you give to your family has been very healing for me.     Dear Daughter,,
    I save the soft inner celery leaves and chop them and add into tuna fish with diced onions, some lemon juice and Hellman's Mayo. Delicious!.......the rest I do can, and I love your video too.
    Change nothing Heather....the longer the better!!!

    I love and appreciate your videos. If some people don't like them, they don't have to hang around and watch them. It's that simple. You can't say it, but I can.     My name is Debbie Rodgers and I live in Leitchfield,Ky. I am a newbie and I don’t care how long ur videos are. I like it because u show and tell exactly everything u do.I did 25 pints of chicken thurs and fri. Everyone sealed except 2. My fault. I didn’t tighten my jars enough. When I got ready to take the rings off the lids just fell off. We had bbq chicken for supper with fried potatoes and brown beans and cornbread. It was delicious. I love watching your videos. I am a little nervous when I tighten the rings because I’m afraid I won’t get them tight enough. Second batch was perfect and beautiful. Now I’m going to do pinto beans.

    I want to can. I've tried Hatch Green Chilis and pickled green beans so far. My list is very long for what I want to try. I didn't know you could can celery. You just made it look so easy. I keep getting stopped at the thinking process of it all. Making it a big, daunting process. I've just recently realized you can do what you just did. Get a few bunches of celery, or a few bags of carrots or potatoes.....or WHATEVER. Clean the jars, chop the product, throw it in the canner and move on with your day. I want so much to just do it. You are my inspiration....keep doing what you do, Heather. If others don't like it they have a fast forward button to help them through. The rest of us just really love listening to your 'babbling' (as you call it). You are a very cool lady and I, for one, enjoy what you do. Peace in, peace out! : )

      +Lori Williams awwww thanks mama!!!!! The sky is the limit for you! The prepping is probably the worst part. Once you actually start to can that's when the fun begins. Try buying petite organic carrots. Something prep replied. All you do is rinse and throw them in the jars. Start simple then work up from there. It's less intimidating I find. Green beans are fun and easy. You have to snap off the one end and them cut them if they are super long but easy and I know at our Kroger they are 99 cents a pound so you can get a lot of jars processed for about $10! Home canned green beans are amazing. Hahahaha just give me a holler anytime if you have any questions!!!!

    Even though I will never can celery, I figured I'd watch your vid since sleep is being so elusive tonite and my bronchitis is keeping me up big time. I am amazed at you. Makes me wish I was 20 or 30 years younger. Seriously. I want to be just like you, in being totally committed to a healthier, more economical lifestyle. Some may call us all old fashion, but this is the future people, believe it. This is going to be our reality, not the Jetson's lifestyle. And I so want to embrace it as you have.

    It is actually power outages that is driving me to learn to can. I am in Hurricane country (Louisiana) and after Rita parts of this Parish were out of power for nearly 3 weeks. It was just dumb luck we were in a part of town they got back online in a couple days. Having grown up in Detroit it was an eyeopener for me.
    Bless you for doing all these videos you are giving me the courage to try.

    I know I’m just learning this stuff, but. I’ve come across several places that say it’s ok to reuse your lids. The Amish do all of the time. They just simmer them with I believe baking soda to “fluff up” the rubber on the rings. As long as the rubber is not broken, cracked, worn down, or have little holes, then you could be good to go. Many of the people I’ve seen use the lids like 3-4 times and then reuse them again on vacuum sealed dry jars. Just a thought. Save some money and some storage space. And whichever kind of video you prefer doing is fine by me. I’ll take what I can get! Much love!!! 💙💙💙

    There was a big storm where I used to live that knocked out all the power in the area and all roads leading in (not the whole state, but a big chunk of it). They had to fix the roads before they could come in and fix the power lines. It was at least a day. I don't remember losing any food, so it probably wasn't more than that for me, but I know some areas had no power for a few days. Yup kinda eery, kinda cool, mostly boring. Not much open. The bars had candles going.
    Keep on blabbin :)

    I love your longer 30 minute + videos, I turn you on and listen to what you have to share while I am busy doing my housework, or whatever craft or whatnot I am doing...I love it, because as you said ( you are my company)...Kenny works from 3:30 pm until 5:00 am...So I spend most of my time alone, and I love your company, you make me smile.

    You crack me up! I just started canning last year also (self-taught, like you) and it's so fun to see someone get as excited as I do after a successful canning project. Been catching up on your videos as you go through this journey. It's great to see little Mason grow up through them. What a sweetie! He'll be a good big brother.
    Would love to see what you think of the canned celery once you open it to use. Been considering it since I saw Bev's video but have only dehydrated so far. Would also love to see some ideas of how you use your home-canned stuff in your recipes. That's one area I still struggle with - along with trying to figure out how to store everything I've canned and dehydrated!!

      you know, i think i am going to make my chicken pot pie filling..... using ALL home canned foods. the chicken i canned, the celery, carrots, green beans and potatoes! i will make a video opening up each jar and showing you how it looks, and show how i make a home cooked meal using only my own canned ingredients! :D

    I shipped to the UK , both the old style and the new ez seal ones they are both great, if you are ordered a large amount I'd also order extra rubber seals as we'll then you are covered for ever.

    I really enjoy the longer videos. Not only do you "chatter" in an interesting manner, you tend to include obscure bits of information.
    Your videos are more in depth on the science behind modern home canning. I learned from my grandmothers, and they weren't very scientific. Exelent cooks, lots of practical experience and they didn't take chances on health, but not scientists.

    Love the idea of canning celery. So many times I need a little for one dish or another. Just dehydrated a couple of bunches last week. But canning it up will definitely be a plus in my pantry. Thanks for the video. I have a old mirro that works wonderfully, the dream is a all American lol.

    Nice video. I never thought of canning celery but makes so much sense. I live in a fairly remote area and I can't think of how many times I wanted to make a soup or stock and realizing I had no celery. This will make it so easy and I will always have some on the shelf. Thanks!

    Don't change a thing girl! Keep doing your videos for as long as you need to. I enjoy every minute of your videos and I look forward to watching them everytime you post them. It is time however, for you to stop referring to yourself as a newbie. You're a pro now, even if it's the first time you make something. I learn from you, so you're the teacher and I'm the student.     Heather I really enjoy videos no matter how long they are. I take my laptop to the kitchen turn it on and you're right it's like you're with me love it! lol my sister lives in California and we go shopping all the time by way of the phone.     I used tattler's when I canned my peaches in a lite, lite syrup, but some of the jars were sticky. I had to run them under hot water in order to open.
    I haven't tried them in a pressure canner because you're not supposed to tightened them all the way down and I'm worried about the mess they might make.

    I love your videos, length and all. Canning and food storage is all new to me, so I love detailed videos. I do, "quick canning" that you make a brine and pop in the fridge and eat within a month. But I would love to learn, long term canning. Question, why do you take the lids off and wash in soapy water afterwards?

      you would LOVE it!
      I take the rings off my jars, the bands..... it helps to wash under those rings, where food can leech out during processing, and keeping them off when you store your jars prevents any rust from forming under there. :D

    Just found 2 big heads of celery in the fridge that my daughter bought at farmers market and they're getting a bit limp. I've decided to can them so they won't go to waste..thanks for the video.

    I love your 30 minute videos. I haven't canned celery but have dehydrated it. My celery turned out great dehydrated and since seeing this video I'll try canning it. I canned butter last night after seeing Starry Hilder's video. You might want to try that. Thanks.

    LOL! I loved listening to this...it reminded me of me! When I'm canning I put my laptop on the counter and pull up yours, Lindas or Noreens videos and just listen to y'all. It's like you're keeping me company. Keep doing what you do! The haters can just move along...... ;-)

    Have you tried using pickle fresh in this? I would think that would keep it a bit crispier like you do the bell pepper and onions. Just a thought

    The length of your video's are fine! But all that I usually need is watching about 2 minutes of them before I start getting hungry. Haha!

    i use tattlers and love that they are reusable... i bought them in bulk when they went on sale... i have had a couple of fails, but not many... i think the tattler site has tips... you put them on a bit loose at first then tighten when they come out... sadly they don't pop... lol... have you used it yet? how were they? off to carrots now...

    Just stumbled across your channel, I believe the student deserves an "A"!! Just retired and am trying to find a canner , not an easy task in these trying times!! Hopefully by this time next year I will have a well stocked pantry!!! Enjoyed the company, you are welcome in my home anytime!!
