The white stuff isn’t sugar, it’s pucker powder(probably malic acid) to make sour apple flavor more sour. Adding sugar at this stage would cause everything to crystallize in a weird way and ruin the texture.
Green apple is one of my most hated candy flavours. That being said this was still very satisfying to watch I love these candy making videos. The green is very nice colour
