I've never had a problem with end-of-season tomatoes from plants in horrible shape (diseased/dying). I've canned them and they've been fine months and months later. I do wash them, core and score them, and cut out any bad spots before putting them in a bag in the freezer. I used my last bag of frozen tomatoes yesterday. A full one gallon bag gave me a full quart of nice sauce - not super thick, but perfect for the chili I used it in last night. It was delicious!
Those look like roma, or paste tomatoes, no need to pull the cores out. Also the acidity of tomatoes nowadays is not as consistent as they were when my mother and grandmother raised them. I bought a bag of citric acid for canning and I add it to my jars faithfully. But when I used to freeze sauces I didn't add lemon juice or citric acid, just cooked it down and froze it. But I had kids, so I waited to add garlic, and onions, until I made a recipe with it. The last couple of years plants are struggling here in Michigan due to lack of rain, and scorching all day sun from May to September, so don't discard tomatoes because of the look of plants. If there are bad spots, cut them open and check them. Beautiful sauce, keep up the good work 👏.
Hi Mary, You did an awesome job. Sauce looks so pretty. I pulled tomatoes out of the freezer this morning. They're in the big roasting pan now cooking away. I'm so not a morning person which causes me to get very late starts getting things done. LOL :) So, I'll probably be working on this way into the night. I always do pint jars, it's just the two of us. I learned the hard way when I canned in quarts. Just too much for the two of us. Hey, you two have a lovely rest of the week. Oh, I really like the mill for removing seeds. Do you know the brand? I've never seen one like it. I have a plastic one that's just a giant pain the the neck! ♥♥♥

Cook it down, add herbs, spices, a can of paste and honey. Process in a water bath for 45 minutes and done. As long as the fruit is in good shape you should be fine.

I freeze my garlic cloves all the time. They defrost really quickly when run under warm water. Very handy too

I mince my garlic, put it in a jar, fill it with olive oil untill the garlic is covered, close it with a lid and put it in the fridge!😊
