probably when they killed the boarder at 2:20 and then got their ship moving out of angle from the other one. the helm who was on the other ship while his cannoneer boarded probably didnt put enough pressure on stirling so they were able to raise anchor and fix sails after the boarder died. second time they turned it around (at around 8:00) because they instantly killed the boarder and got to take off pressure from the other ship when they got their sail raised around 11:20 they were able to get a good angle on the other ship and repair while putting in damage
The sudden stop makes the other boat nose so they don't have cannon angle & you can get free cannons off, the helm (especially if wheel is broken) doesn't have time to react and straighten there wheel because its cranked left
