- Full written recipe for Veg hakka noodles
Prep time: 20 mins
Cooking time: 10 mins
Serves: 6
Ingredients:
• Capsicum 2 medium size
• Carrots 1 medium size
• Cabbage half or 1 cup
• Noodles 1 packet
• Boiling water for noodles
• Salt to taste
• Oil 1 tbsp
• Garlic 1 tbsp (chopped)
• Spring onion bulbs 1/4th cup (sliced)
• Spring onion greens 1/4th cup (chopped)
• Salt and pepper to taste
• Soy sauce 1 tbsp
• Chilli oil 1 tbsp
• Spring onion greens 1 tbsp (chopped)
• Vinegar 1 tsp
Methods:
• Cut the capsicum in juliennes, that means length wise strips.
• Peel the carrots, trim if the head and tip and further cut them into juliennes.
• Take off one layer of cabbage, cut the base and cut them in toc shreds.
• Boil water in a wok, add salt and oil, add the noodles and boil for 6-7 minutes. Do not overcook.
• Strain the noodles and rinse it with cold water or with tap running water, pour few drops of oil and mix with noodles to avoid it from sticking to each other.
• Set a wok on medium heat, add oil, garlic and spring onion bulbs, sauté it for a minute.
• Add the spring onion greens, shredded cabbage, julienned carrots, capsicum and sugar, mix well and sauté it for 2-3 minutes.
• Add the boiled noodles, salt and pepper to taste, soy sauce, chilli oil and some freshly chopped spring onion greens, mix and toss well for 3-5 minutes. Add vinegar and toss well once again.
• Your veg hakka noodles is ready to be served, serve hot with schezwan sauce.

I made this recipe and just added bean sprouts. It was really good. I use chilli powder and oil as I had none pre mixed. Really good thank you!
Which oil? And did you directly put the powder and oil in noodles or did you pre heat that oil?
@@abhisekdalmia693 I put olive oil and added crushed chili peppers and a bit of chili powder into a jar and let it fuse and then used it whenever I needed it for cooking. I would add it to thr hot noodles and veggie. ☺
Can u tell which Noodles and how much quantity of it exact to be used??? As there are many noodles in the market u know... Every one is different from the other
I love this recipe.How closely everything is explained in this video.No cooking channel tells how to cut vegetables so deeply Which is a very important step for any beginner, but you have told very well.

One important note
It is advised to start the sautéing of vegetables in parallel with the boiling of noodles or, when they (noodles) begin softening a bit. If you cook the noodles and put them aside, and then begin sautéing the vegetables, by the time your vegetables are sufficiently cooked, your noodles will start coming together and becoming like a lump (upma types).
Even when they rnt fully cooked???cud we not.sprinle the chilli oil to them
Ok . Next time after u rinse boiled noodles with cold water , try any of the 2 things....put some veg oil drops n lay them flat on a thaali or any flat base . ....or put noodles in a container with little water ......both these process take away the starch . Doesn't get messy later . Try it

Just made this. Added garlic/ginger paste, sesame oil to the initial frying and finished with chili garlic Huy Fong red paste. Outstanding.

Clearly, ur statement reeks of ignorance as well as arrogance.
Maybe in north, people use dhaniya or coriander in indo Chinese but here in Mumbai and many other places in Gujarat, coriander is a big turn off for most people having indo Chinese
@@lokeshmotwani1 even the most fine dining places add corriander to manchurian/babycorn/soups although it's not added in noodles. And as far as mumbai indo chinese is concerned I'm sure as fuck they add corriander as well it's just chopped so finely you wouldn't notice it. Indo chinese has a certain flavor which is the combination of ginger garlic corriander and spring onions of course.

Coriander has never been used in indo chinese nor does it add any specific flavor unless u prefer the taste of chewing on paper.
