The Journey from Milk to Ghee - Learn to boil milk, and make Butter and Ghee.

  • This video is a masterclass on how to start from a packet of milk (as we get in India) all the way to making ghee. Along the way, I will tackle common problems that arise in this process. If you encounter these issues or are unfamiliar with the process, this video is for you.
    The following are some of the common problems people have
    • The milk boils over and makes a mess
    • It burns quite often and the pot is hard to clean.
    • Extracted cream spoils easily
    • Homemade butter has a very short shelf life in the refrigerator
    • How do I know when my ghee is ready, sometimes mine has a buttery flavor.
    • My ghee burns often.
    • The pot is so hard to clean
    The video will take you from boiling milk, to extracting and storing cream, making butter and then ghee. You need not use all the steps in the process. For instance, I often buy butter and make ghee from it for home use. I think it is harder to adulterate butter than ghee.

    The Stages in the Journey
    The whole process takes a few days, but there is no hard and fast rule when you move from one step to another. The refrigerator is your friend.
    1. Boil the milk (about 20 -15 minutes on low flame) and refrigerate overnight. If you get homogenized milk. Buy fresh cream and continue from step 3
    2. Skim the cream off the milk and store it until enough collects.
    3. Let the cream ferment and turn to clotted cream. If you do not have time to make butter right away. Store in the refrigerator for a day or two and then proceed.
    4. Churn the stored cream to make butter and buttermilk (5 - 10 minutes, depending on the amount of cream)
    5. Wash the butter and store it in the refrigerator
    6. Clarify the butter to make ghee. (10 minutes for a cup of butter)
    1 ½ cups of cream will make about a cup of butter, which in turn will make ¾ cup of melted ghee.

    The trick to turn the gas off before the ghee is done was immensely helpful. Now I know why my ghee was always a little overdone. By the way, home made ghee is far tastier than store bought, so I always make it at home.
