I used to hang out with local fishermen from where I live, Malacca. The stingray was the first fish I ever caught but landed by a more experienced guy. It was about 6.5 kg. To avoid the urea smell in it's flesh, once you land it you flip it so that it's bottom surface faces up. You will notice that it will continue to expell or excrete water .. as explained by the local fishermen as the cause of the urea smell found in it's flesh. Here we don't remove the skin, clean the fish and cook. When it's cooked it the easiest way to remove the skin and separate the cartilage. Cook it in a curry. You can marinade & deep fry it or bake it in a foil with spices. In order not to burn it, wrap it in a banana leaf. Finally, you can grill it. Prepare your dipping sauce. Make sure you have vinegar in the dipping sauce because the grilled stingray has too much nitrogen in it's flesh which can result in getting kidney stones if consumed in large amount over a long period of time. So, vinegar is used to neutralise it. Have fun, cheers!

in Indonesia usually we buy it smoked.. it called ikan panggang or iwak pe in javanese. you can fry them and eat it with sambal. pound it with sambal, and you get penyetan. or you can make mangutan. you just need garlic, shallots, chilli, lemongrass, fresh bay leaf, lime kefir, and galanggal. don't forget salt and chicken powder (or any kind MSG you like) for garlic, shallots&chilli you can pound it or just chop it. put everything in the pot, you can add shrip, chicken, tofu and tempeh too.. put them all together. add water or chicken broth. but don't fill it up. bring it to boil, then shimmer it for 15minutes (low heat). last, add coconut milk and bring it to boil for one more time. eat it with rice.
Honestly it's amazing seeing just how much work goes into breaking down and preparing fish. It really makes you appreciate the seafood you eat so much more. I've actually started trying to recreate dishes you make in your videos to taste when I happen across some fish, and they've all been pretty good. It always makes me hungry seeing these videos because I start getting ideas myself about what you could make with these fish. Keep up the good work, and take care of your health as well! 😊💜
In Singapore/Malaysia, there's a famous dish called Sambal Stingray/Ikan Pari Bakar. It's barbequed stingray served with sambal (chili paste mixture). Maybe you can try making it if you have any leftovers

This was a really good one. Once you cut the meat into bite-sized pieces, it looks like a great and versatile protein for many recipes and types of preparation. Very impressive. Also, 13:29 ~ Seeing the way that the rigid cartilage "bones" are laid out helps me to understand how stingrays (and skates) undulate their fins. However, 15:57: "So good! It tastes like raw chicken" - was one of the few times that you completely lost me. But I took a beat to think about it and figure it's less, "This tastes delicious because it tastes like raw chicken - which is delicious." and more "The profile of the raw stingray that I am eating has texture, flavor and structure that correspond with that of chicken and chicken is so good."
oh, no, i think he actually means raw chicken. in some areas of japan, there are restaurants that serve chicken sashimi/raw chicken, and that they have a buttery texture, I've had it before and its pretty good tbh. the chicken are grass fed and specially bred to be eaten raw, the breeder, restaurant, and the chief all have to have licenses to serve, breed, and prepare the chicken so its not much riskier than eating raw fish.

That looks delicious. I feel like the meat taste absolutely delicious in a fish and chips beer batter, and I was imagining fried liver so I was salivating the whole time, as I usually am with your videos. You make everything look so delicious!!
Try soaking the liver in milk for 1 hour before cooking to get rid of bitterness and grease . Wash the milk before cooking though . Love your knife collection btw !!
For the next big crazy fish you breakdown, it’d be fun to have a second video where you cook it up and serve it to local ppl to get their reaction to the taste!
Fun fact: the number of deaths due to stingrays is literally only 17. They are venomous but for the most part you will live....dont intentionally get stung by these things though. It's still painful.
@@NemuriNezumi94 yup. His death was literally just an accident. If the stinger had hit him anywhere else he would have been fine. Hell if he had left it in him he would have been okay. But steve never wanted to hurt or kill an animal and cutting off the stinger would have been a death sentence to the animal

In Sonora, México, we love stingray meat. We prepare it in soup and in tacos; the thing is, we start using it as a replacement of sea turtle meat.
We also use his leather for boots, purses, wallets, belts, etc.
