- I show you how to make Greek spoon sweets out of green walnuts, called Glyko Karydaki. These are made from unripe walnuts that haven’t formed a shell yet. They are best harvested when young and tender in late May, no later than mid-June. If you can pierce through the walnut easily and without much resistance, then a shell has not formed yet. This is a long process, taking about a week from start to finish. Spoon sweets are a long tradition in Greece. They’re made from a variety of things such as fruit, nuts, rose petals, etc. When visiting a Greek home, guests are greeted with a silver tray adorned with a doily, a tiny crystal plate, a small spoon, and a jar of spoon sweets. This is all washed down with a glass of cold water and sometimes a Greek coffee. Re-create these delicious sweets to serve to guests in your home, or to spoon over Greek yogurt or ice cream! Ingredients:
2.5 lbs / 1.13 kg Green, unripe black walnuts that haven’t formed a shell
2.5 lbs / 1.13 kg granulated sugar
2.75 cups / 650 ml water
¼ cup / 60ml lemon juice
1 cinnamon stick
4-5 whole cloves
1 tbsp vanilla extract or
2-4 rose geranium leaves (Pelargonium graveolens)
