I'm not really into cheese as I am more into whipped cream and sour cream as well as yogurt. I do like this presentation as it gives me some ideas on all the things you can do with cashews which I enjoy in almost any form.

Love your recipes & website but am interested to know why, according to your comparison of cashews to cows, the huge cost & effort discrepancies, WHY do cashews cost so much to purchase? And as follows, the prepared cashew cheese?

I bought the book first and haven't regretted it at all! I made two batches of rejuvelac and one was in the real heat of summer so I thought it would be 'off' but it was absolutely the best and lasted for weeks!
