If I am applying to a course based Master in Engineering. I assume I don't need to focus on research interests, so should I explain how that masters would help me do a job I´m interested in? If I have limited job experience, is it okay to talk about projects I did during my bachellors?
Yes. And I would recommend focusing i what you want to do in the future and how the grad program will help you get there.

I actually am currently working on sharing an example SOP and PS from a student who got into UCLA's envt engineering program that I helped last year. It will probably be out in the next week or so. Make sure to subscribe to notifications (hitting the bell next to the subscribe button) so you are notified about it.
I have a question, what happens if you can write only 500 words maximum for PhD statement of purpose and you have many things to write?
Which part do you have to focus on? my achievements or research plan?
Think of each component of your application as a piece of the puzzle. There generally isn't a word limit on a CV so make that as long as you want. In your letters of rec, have those people mention your achievements, then in your SOP you can touch on your achievements but focus more on your research. Do people who read SOPs for STEM fields not educated in those fields? Genuine question
They will be knowledgeable in STEM but they may not be an expert in your exact area of work/research. Admissions committees are mostly made up of the professors in the program, graduate students, and maybe some committee members that represent other interests like a diversity officer.
If this is a weak sop, I'm in great danger :3
