    HOW TO MAKE BOTTLE GOURD (LAUKI SABZI) WITH SHRIMPS VERDUR | GOAN CALDINE RECIPE | GOAN VERDUR
    The flavor of coriander dominates this verdur dish with a subtle heat from the green chilies. Bottle gourd being rich in dietary fiber along with succulent shrimps definitely makes this dish amazingly yum. The addition of any kind of seafood gives the curry its own unique flavor.
    This Goan Caldine dish can be well enjoyed with steamed rice, bread, or chapati. Instead of bottle gourd, you can also use pumpkins, breadfruit, cauliflower, or even turnip.

    INGREDIENTS:
    1 medium-sized bottle gourd
    Freshly grated coconut
    ¾ teaspoon of turmeric
    1 teaspoon of cumin seeds
    1 tablespoon of coriander seeds
    10 peppercorns
    5 cloves
    2 cinnamon sticks
    12 pods of garlic
    2 diced tomatoes
    2 chopped onions
    6 green chilies
    2 tablespoon of Cooking oil
    Salt and water
    -- Ensure that the bottle gourd has smooth skin, is pale green in color, and is free from any cuts, spots, or blemishes. It should be firm and the flesh should not feel soft when pressed.
    --To make the bottle gourd cubes, first, let’s discard the stem on either side.
    And cut the bottle gourd in half.
    Using the peeler, peel off the skin. If you prefer consuming it without the seeds then extract the seeds first and then chop them into cubes.
    --To make the spicy coconut extract, drop in the garlic, cumin seeds, cinnamon, coriander seeds, clove, peppercorns, freshly grated coconut, some turmeric and add a cup of lukewarm water. Grind it to a coarse paste.
    --Take two separate bowls and a strainer.
    Pour in the coconut paste in the strainer and strain the extract. Continue to do this till the paste gets dry. Keep the first bowl with the thick extract aside.
    --Now empty the residue in the blender and add a cup of water and grind it again. Into the second bowl, strain the paste and this will be your thin extract. Be careful not to mix these two extracts.
    --Heat 2 tablespoons of oil in a container
    drop in 6 green chilies after slitting them and after a while add the onions and saute it. Then add the tomatoes. Cover the container and allow it to cook for about 3-4 min till the tomatoes soften.
    --Gently add the bottle gourd cubes and give it a nice stir. Let it roast for about 5 min.
    --Pour in the thin extract and allow this mixture to cook again on a low to medium flame till the fruit turns soft. Sprinkle some salt.
    Add shrimps as it will greatly enhance the flavor of the dish. Make sure the shrimps are already marinated with salt. For vegetarian lovers, you can skip the shrimps. Add the thick extract. Cover the container and allow it to simmer for about 3 to 4 min.

    Mouth watering yummy dish . The chef is also very presentable. Very simple quick just few ingredients and less effort yet very yummy cant resist the appetite for such delicious dish .

    Well done goache manaa, how about if we use dry prawns? Sure it will turn better n tasty verdur as I still remember when my beloved mother used to cook.

    Where do you get the coconut scraper that you are using???

      I'd like to say it came along with the coconut, but you can get it in any utensil shop. The one I am using is Anjali brand from a local shop.
