i find the biggest problem with jarred garlic is the fluid they store it in. It always seems to be some kind of acid every time and it absolutely colors the flavor of the garlic. (assuming you're not getting fresh) You're much better off buying dried minced and rehydrating rather than getting garlic steeped in citric acid.

Well we use garlic, in buckets, not jars. 10s of 1000s of pounds used a year. How much food do we produce? Millions of pounds a month. I like using fresh garlic. But jarred minced garlic? Not garbage. Just in water. You are incorrect. What chemical, do you think is used? I see Certificates of Analysis. No chemicals added. Food logistics my business. Water, and garlic. That is it. There are stuff you can and should put in Jars. Tomatoes for example. Capers. Corn. They get better that way. And then there are foods you just have to eat fresh. Garlic. Potatoes. Mushrooms. Asparagus.
I wonder how much the flavour quality would preserve or degrade if you were to make a large batch of very strong garlic oil and then freeze it to use later. 🤔
I would never recommend freezing the oil. It has a shelf life of over 12 months in the fridge. Also, reuse your garlic oil in your next fresh batch to enrich the flavours further and extend the life of the product.

Still love it! Especially for those of us with disabilities and chronic pain, "precut/chopped" are the little shortcuts that actually get me cooking some days...
They have fresh chopped garlic in the frozen section. Try it out. It's 10000x better

You can buy chopped garlic in olive oil.
As someone who doesn't cook on the regular it's great because I can't always buy the fresh stuff and have it stay fresh until i cook next time, and it's not always convenient to go out and get some at midnight if the stuff i have is bad.
It's not as flavorful obviously but it's way more convenient if you're not the kind of person who has time to cook every day or do a single meal prep for the entire week etc.
They sell tubes of garlic paste that I think is a better alternative for this purpose. It seems to have less added liquid.

Garlic lasts pretty long. Buy a small bulb. Probably outlast the jar.

It's true, but in Australia fresh garlic is so very expensive if you cook a lot, so for me as a student canned garlic or dry ground is the optimal option 🥲
(FYI: the price for 1 kilo in Austria is about 40 AUD whereas in my country it's only 2-6 AUD)

Meh, I use both fresh and this depending on the situation. I do only buy the kind that is preserved with citric acid and not the other chemicals. I think Costo has one like this in a huge jar. I wouldn’t use it on something garlic forward…but for items where the garlic cooked into the dish it makes very little difference.

Not all of them use oil. There are ones that use vinegar
I tried using jarred garlic in my curry rice. The vinegary taste ruined it.
Walmart and other stores have garlic paste in a squeeze tube, generally in the refrigerated produce section. Ginger paste, too. Both perfect for adding to curries, and no weird taste.

Having it processed means that the allium in the garlic is reacting with the water and/or preservatives.
Do a side by side with fresh and you'll notice the difference immediately.
It's not like garlic is the quickest rotting food in the world

I use it all the time in stir fry with ginger paste. Never heard a complaint about it.

I feel this way about all of the roasted garlic olive oil variations too, completely overwhelms dishes with an odd garlic flavour.

We make our own with a lot of salt. Miles better.
To me jarred garlic tastes like it's gone off. Also it's too watery to use in stir fries.
If you have a suggestion for how to keep garlic on hand and stored for a long time, that would be great.

Garlic usually lasts at least a few weeks, but to keep it longer, you can freeze it, either as whole cloves, slices or minced.
I keep it in the dark, cool temp, w other alliums. Lasts for weeks.

Omg I thought it was just me it smelled like spolied vinegar to me. I dont remember it snelling like that in the past. I no longer buy it.
It has its uses- esp in long- cooking soup or stock. Don't teach people to not go for the easy opt when you don't like it!... give them more, like HOW and WHEN to use it when YOU DO NOT HAVE TIME.
if you have the time to cook something like a soup for several hours then I'm pretty sure you'll also have the 2 minutes to chop up some fresh garlic.

100% agreed, jarlic is gross! So easy to use the fresh, pre peeled garlic sold in grocery stores now. And don’t bother chopping, just grate it! Super fast and easy, but none of the terrible flavor…

I actually prefer how it makes the garlic more garlic-y and slightly sweeter. It also took me a long time to get off the "it must be fresh or it's garbage" train. People didn't invent new ways of food storage for no reason and it's a food science all in itself🌈.

It's fine but it has different use
The dried minced lasts longer, just rehydrate it before using.
Powdered is fine if you're using it constantly and it's not in your cabinet long enough to clump up.

Until you can create a device to crush garlic that requires the power you have in your pinkie fingers to use, I'm going to stick with jarred garlic. It's better than no garlic at all.

I realize that everyone has a different palate and some cannot taste certain basic flavors in certain foods. I'm really sad for them. The only thing I for sure would not eat with fresh garlic is ice cream, sorry Gilroy Garlic Festival😝😖

People are increasingly time poor, and there are a lot of people with disabilities. A lot of products (not just food ones) that appear to be made for "lazy" people were actually designed for the elderly and disabled.
Time and physical limitations. Disabled and elderly people still have to eat, as well as people who weren't taught by their parents how to cook.
