Cashew Chicken is very popular stir-fry dish. In addition to bell peppers, other vegetables such as carrots, celery or cucumber can be used. The sweet and sour sauce has a great balance. It is easy to make and enjoy at home.
    Ingredients:
1 chicken breast (or chicken thighs), diced
    1/2 green bell pepper, diced
    1/2 red bell pepper, dices
sliced white part of 2 green onions
    ginger slices
    3 cloves garlic, sliced
    a handful roasted cashew nuts
    For the sauce:
2 tsp potato or corn starch
    2 tsp light soy sauce
    1 tsp dark soy sauce
    1/2 tsp sugar
    1 tsp dark vinegar

China's siblings in Thailand also makes a very good version with something called nam prik pao, which is also called chili jam. It's really nice to fry in some oil after adding the aromatics, and before adding in the vegetables. Btw! It's not the chili jam Uncle Roger is always roasting Jamie Oliver for.

Hey Ling, I'm german, so I always love sauce. Sure gonna try this! (As I've mentioned before: all these recipes with sooo few ingredients are the most fascinating to me.)
I still remember you saying, that during the first years in the US, you shyed away from US or european cuisine. In fact, I just wrote my take on seafood pizza to another channel and my fiancé down under. Maybe you wanna give it a try. Or even, later on, come up with your very own version. This is my way to thank you for this recipe: a recipe, that I've been making for ages.
Nothing anywhat traditional. Just my take on it.
I love to make seafood pizza: the dough, that you only need to roll out. Tomato puree with salt, pepper and some herbs (tarragon, oregano and maybe others). Onto the dough. Finely sliced garlic on top (rule of thumb: too few garlic is possible. Too much is not ;-)
Defrost seafood mixture (maybe even a fish fillet) and pad dry. (Pls: no surimi in that mixture! I love surimi ! But in seafood mixture it's only there to cut costs. Plus: watch the kinda shrimps in it. Maybe rather create your own mixture from just octopus, squid, shrimp and mussels.) On top of your pizza. Then add a thin layer of finely sliced onions. Crumble 'em apart to rings. Top that with your mozzarella slices. This way the cheese will melt on top of the onions and kinda coat them while browning. Kalamata olives can be added into that layer of seafood. Or those sardine-filled green olives. Or both. Fresh cubes of artishoke can be a highlight. But forget the canned stuff. Bon appetit!
    Tuna pizza
needs this thin layer of onion rings, too. For that, the canned tuna (in water, not oil) is absolutely fine. Kapers are another nice addition to both versions.
Greetings from the far north of Germany!
