    250 grams (1 ¾ cups) Bread Flour
    125 grams (1 cup) Whole wheat Flour
    125 grams (1 cup) Spelt Flour
    115 grams (½ cup) Sourdough Starter
    300 grams (1 ¼ cup) Water
    50 grams (3 ¾ tbsps) Extra Virgin Olive Oil
    10 grams or 1 ¾ tsps of sea salt
    100 grams (¾ cup) Soaked Flax Seeds
    25 grams of Black and white Sesame Seeds

    Absolutely great recipe!! This recipe is a repeat for me. I have tried it with various ratios of flours. 50% whole-wheat flour, 50% spelt flour, 100% atta or Indian roti flour. Every time the same great result! I believe the high quantity of flax seeds in the recipe increases the gluten level of any flour and the end result is a beautiful open crumb.

      Thank you for your feedback!!! I’m gonna try different ratios too and experiment more with it, I usually always use the same ratios and flours.

      @@AKneadtoBake Only change with handling the flax seeds is I wash it first and then soak it like you suggest. This way I don’t throw away all that gooey goodness which helps with the open crumb. Just kept topping with boiling water as it absorbs it as I don’t know what quantity of water to add in advance.

    I baked these this morning! Delicious!! My dough was not as soft as yours, but they puffed up beautifully. I did have a problem adding the flaxseeds. They were so slippery that they wouldn't incorperate into the dough. I finially stuck it in the kitchen aid mixer (dough hook) for 3 minuets and that did the trick! Thank you for such a wonderful recipe. :)

    Having trouble making steam for my sourdough breads, thus not getting the crust i'm seeking. I had forgotten completely about using ice. Nice to see it here, i'll definitely try it. And also the idea of no-formed crusty rolls is pretty good, i have to try these rolls. Nice videos you're making. Hope your channel gets bigger and bigger.

    These look fantastic! I really enjoy baking your recipes. On the sourdough starter, do you mean levain, the actual starter, or discard?
