    I've been making pita bread for about 3 years and sourdough boules for about 6 months. I've been wanting to marry the 2 for even better healthy pita. Definitely going to try this, thank you.

    OMG I just found your channel and I’m loving all your recipes I’m new to making a sourdough starter so I’ve been looking for different recipes and your channel is one of the best why it brings me back to my childhood memories growing up smelling flower tortillas early in the morning and of course I was part of making them from the ages of eight and on I grew up in a part of Texas near the border of Mexico) my grandmother actually lived on the other side of the river in Mexico those are the memories that you have sparked from your recipes I will attempt to making some of your recipes can’t wait thank you so much! for your beautiful work!

    Great recipe! Never made pitas before but these turned out great! Cooked them out on my grill as you suggested, that went well and my house didn’t get hot.

    Hice está receta tal cual y fue un éxito total, la masa muy suave y fácil de amasar, las pitas se inflaron en el horno, y su sabor espectacular, mil gracias por tus recetas, había intentado con varias recetas de pitas pero ninguna me gustó, la tuya es la mejor, felicitaciones!!!

    Excelente receta.
    Siempre hago mis pitas en sartén porque me da pereza prender el horno, he probado otras recetas con levadura y nunca lograba que se inflaran completamente pero con tu receta al fin lo logré y estuvieron deliciosos. Gracias!!

    I made this with great success, BUT as others have noted the dough comes out VERY sticky, there was not nearly enough flour. I added more flour after 15 minutes of kneading until the dough was manageable. I left mine overnight in the fridge and pulled out the next morning to get to room temp. Then I cooked just as the video inststructs and mine puffed right up. Perfect (if you add the extra flour)

    Very tasty! I made mine with half white AP flour and the rest red fife and spelt. I think i overcooked them though. Plus, they didn’t poof up completely… they are quite crispy! I wonder what i shoukd do next time so they are pliable…after kneading it, i let the dough proof for a couple of days in fridge. it rose nicely and smelled like it should…

      Maybe the mix of all those flours and the overcooking of the dough made them that crispy

      Store them in a plastic bag in a fresh and cool place

      You can substitute it, just make sure that the gluten in the dough is well developed

    Could you make these on the stovetop with a lodge Dutch oven inverted so the fry pan section is on the stove and covered by the pot section?

      Yes Steve, you could even make them without the top lid, a very hot pan would be enough but I like to cook them in the oven because I feel like they get cooked better!

      You can do it if you want, I’ve never done it on pita bread but it can be done

    How do you keep that flour on the pan from burning. I have not tried the oven method yet, but I am going to do that. But when I do the stove top in my cast-iron, the flour in the pan burns, the pan itself turns color, and it almost ruins, my cast iron. I know you’re not supposed to put any oil down so I don’t know how to keep my pan from turning black. I have to keep scraping all the flour off and putting new flour down and it’s a mess in my kitchen. I guess I’m not doing it right. The pitas turned out beautiful however

      Try to use less raw flour that’s the only trick

      Yes at low speed I always knead my doughs in a kitchen aid for about 20-25 min it depends on your dough

      I kneaded my dough in a stand mixer and looks like I over kneaded it... yikes. It became sticky. I'm still trying it and it's proofing, fingers crossed

    How do I make this 100% whole wheat? And how much was used to make the starter? 80g at 1:1:1 ration? Thx 🙏🏽

      You have to substitute the flour and the hydration has to be higher. 80 g at 1.1.1

      If you use all whole wheat flour use at least some vital wheat gluten if not your pita breads will be very dense

    I just made this according to your recipe. The dough was very wet and sticky, not like you show it in the video. I kneaded it for 20 minutes and let it rise in a hot kitchen for 4 hours. Only one of the pitas puffed up. All the others formed small to medium bubbles. So where did I go wrong by following your instructions to the letter? I gave them to a neighbor, so am not sure what they were like once sliced in half. Will let you know when she reports back to me.

      If it was very sticky and wet it needed some kneading still, that could have been one of the reasons. Shaping the pitas can get tricky too… make sure to not roll them too thin and wait until they puff up. Your pan needs to be very hot, if it is very hot and the shaping is done correctly you just need to wait until they puff up, it can take awhile.

    Mine was sticky. What did I do wrong? I used a scale and measured all ingredients. I do live at 5,000 feet.

      Maybe the type of flour you used needed a little bit more of flour

      It could be many reasons, maybe the pan wasn’t as hot or you rolled them too thin
