  • In this video Dennis tests himself twice - once eating a sweet potato by itself and the second time eating a sweet potato drenched with butter and bacon drippings, along with several bacon slices. This was done in response to criticisms by some of the plant-based eaters who declared that his earlier potato test was illegitimate because he put butter on his potato. In their minds the butter magnified the blood sugar spike. But is this true? Does not fat have a tendency to blunt blood sugar spikes? Dennis tests these theories in this comparison test using two sweet potatoes.

    I went full Keto last April, I lost 35lbs the first 6 weeks, and 40lbs overall. I haven't felt this good in years, both physically and mentally, since I cut out all carbs. Both of my parents are insulin dependent, and I knew I was heading that way too until I cut out the carbs. It's not easy, I still crave all the things I used to eat, but I refuse to let my taste buds ruin my health.

      I went total carb I just ate potatoes for three months and lost close to 40 pounds my triglycerides went from insanely high down to normal my cholesterol dropped AC1 went back down to normal. Yeah and and my fasting blood sugar went back to normal.

    I love that you mentioned Indian people on veggy diets are getting diabetes.
    There is a dieabetic Indian guy at my gym, eats only veggy. Overweight, no muscle at all. Works out on a treadmill for a couple hours each day to "control his blood sugar". Hasn't lost a pound of weight after a couple years of doing this.
    One day I felt sorry for him and tried to tell him about LCHF and Dr. Jason Fung et al. He listened and then discussed it with his doctor who told him LCHF would kill him ! So he continues taking his insulin and slaving away at the treadmill.

      It's not the veggies but the carbs and a veggie diet doesn't make for lack of muscle. A sedentary lifestyle and protein poor diet does. Remember that the elephant is a vegetarian and can flatten a truck in a second. In India, like the rest of the world, we have copied (or rather our food businesses have copied) the highly advanced American medical "expert advice" and modern food companies, flooding the market with cornflakes, hamburgers, pizza and other junk. A generation ago there was almost no diabetes in India and now we have one of the largest diabetic populations in the world. Again due to modern marketing, "healthy" oils like corn oil, canola oil etc which have replaced oils like ghee have also contributed. Thankfully, like in the US, Indians are catching onto the lies.

      @keith cunningham Incorrect. There are millions more people both in India and the US that are chomping down on sugar and mickey dees that are NOT diabetic. It's purely a commercially created problem worldwide led by food companies+medical "science" in America. Like I said, that's changing at least in India where ghee was the normal cooking oil. It's now the go to oil for people who have called bs on the food+medical industries.

      keith cunningham No it is because of modern processed foods with added chemicals, lots of refined sugar and refined seed oils in the context of a diet higher in plant matter and lower in animal foods.
      Earlier diabetes was low but high plant eaters like those in India were plagued with physical weakness and nutritional deficiencies to a far greater degree. Indians have been quite unhealthy compared to many other indigenous groups for centuries due to vegetarian tendencies.

      Chilarai The elephant runs on short chain saturated fats obtained from fiber with the help of microbes. Humans cannot do that to that extent. We need energy that is easier to obtain from foods without microbial help, similar to carnivores. We however do have the ability to utilize starch and a bit of sugar from easy to digest plant matter. We are not herbivores like elephants but carnivorous omnivores.

    I’m a 69 year old man and I was diagnosed with diabetes about two years ago caused by my extreme exposure to Agent Orange in Vietnam in 1971 and ‘72. I’ve always been active and never overweight. I worked out and ate well (few sweets, no colas and was never heavy a heavy alcohol drinker and didn’t smoke).
    I had read, after my diabetes diagnosis that sweet potatoes, while they are high in carbs, they are also high in so many other minerals that are good for you it kind of equaled out. In September of last year I was diagnosed with pancreatic cancer. I had an operation to remove the tumor and have just finished six months of chemo. I have lost down to 130 pounds from 185 last year and all my doctors have told me to get back on carbs to get my weight back up. I still eat sweet potatoes occasionally I have gone back to a more keto diet. I really like sweet potatoes.

    Here in the UK we are told sweet potatoes are good for people with diabetes but its clear in your test they are not good. I need to stop eating these so thank you Dennis for sharing your video.👍👍👍

      More like not as bad. Would you rather get hit by a person riding a bicycle at top speed or a person driving a car at top speed? Both will do considerable amounts of damage and both scenarios are best avoided, but the bicycle will hurt less thus it's the "better" choice. It's still an even better choice to avoid either if you're diabetic.

      @@medpub "So what are the benefits of Sweet potatoes?" They are extremely high in beta carotenoids. The stuff people pay insane amounts to have a tiny amount in their "grass fed" meat.
      Overall this "experiment" was just to mislead people, why say its animal fat.. when you do not compare it to non animal fats? Yeah, to mislead people to think that animal fat is somehow good. You can have the same effect just by eating protein or fat with the potatoes. Plant protein and non saturated fat, so you dont die from a heart attack in few years.

    My dietricton said sweet potatoes and whole grain bread are okay for diabetics. Thank god for you and my tester of cause ha found that it made to big of a spike. Now she is an ex dietriction . I now check foods myself. Made big difference. What i dont like is the fact that people are trusting people like that and could be puting themselves at risk. Test and be your own dietriction.

    Super interesting but makes sense. The sugar/carbs still gets into your system eventually, it just takes longer. But better to slow the spikes / danger zone.

    I got my did my A1C yesterday after having a 10.8, 3 months ago. I went from a vegetarian to a low carb, carnivore. My results yesterday were 5.2.
    I followed your videos on how to test the food I should eat. You of course are right on. The numbers don't lie.

    I didn't believe it until I tried it, but drinking some apple cider vinegar in water after eating a high-carb meal really lowered my postprandial blood sugar spike quickly. It was amazing. I would like to see you make a video recording your blood sugar results after intake of ACV. I would also like to see your blood sugar results after taking a walk after a meal.

    Thanks for all your work, Dennis. I did a bit more analysis of your data... the average BG for the bare potato was 161 for the two hours, while the average BG for the tasty potato was 158.25. So while the spike was different the effect on A1C was close to identical. It does illustrate, however, the problem with the usual post-meal monitoring regime. I really want to get one of the new patch systems which give a minute-by-minute record, rather than the few points that I get with finger pokes. If they only weren't so expensive. I do have to tell you, though, that your work helps me a lot.

    Butter n bacon reduced the spike *but* the 2 hr reading shows that all the sugar still got in, only slower

      Lower spike, slower drop. Definitely is better than a higher spike followed by a lower drop

    I always heard that you should not eat fat with high glycemic carbohydrates if you can avoid it. The high insulin spike will push the fat right into the liver and around the belly and into the rest of the body once the liver glycogen is maxed out.

    Always excellent videos and info, Mr. Pollock. I suggest just one more test - Grated and Drained (pressed of the starch) potatoes, fried in some animal fat.. I would be surprised by a rise over 145..

    FATs are your friend, vegan or not. It's problem when you eat 4 stripes of bacon with a stack of pancakes/syrup and a large slab of hash brown/margarine, then wash it down with 20oz of OJ.

      @coconut Joe, diabetics have no business drinking orange juice or even eating fruit to begin with. Common sense. If you have diabetes why in world would you eat fruit and make your problem worse? The Standard American Diet has been killing people for years. People trust their drs and they do whatever the holy guru says. People need to do their own research and learn the truth.

      @@Dr_Dieta The reason why whey keeps blood sugar down in this scenario might be a very dangerous and unhealthy one: Whey is known to spike insulin a lot. High insulin itself is harmful to many of your organs but especially to your pancreas. So having whey can make things worse in the long run.

    with the second experiment , the fact that you had protein with it (bacon) is the reason , it didnt go down quickly , actually protein makes sugar stay a little longer in your blood :)

    A question to consider is, is a peak of 187 really a significant difference compared to 201? Also, is it better for our bodies to have a spike to 201 then quick drop back to normal compared to 187 but staying above normal for a longer time?

      there are thresholds, yes there is a big difference in the amount of insulin needed as well as the metabolic changes

    It’s a fact that glycemic control becomes considerably worse after following keto/low carb diets once challenged with a high glucose meal. You would have to check this after eating decent amounts of carbs for a few weeks to see how your body in it’s normal state handles high carb foods, otherwise it hasn’t shifted from burning its back up fuel (ketones) to its preference (glucose).

    Another great self test, as was the white bread whole bread myth buster. I love what you’re doing because you’re a case study of One, who is willing to experiment and demonstrate and learn exactly how foods effect your blood sugar. No smoke and mirrors, no hidden agendas, just let’s try it out and see. I’ve done similar tests and I’m inspired by you to continue. My goal is to eliminate my diabetic condition, as I am now calling it, with diet. I am a work in progress but thus far I’ve reduced my A1c from 6.4 to 5.9 in one month ( tested at home using A1cNow). I plan to do the home A1cNow every month until my next lab work. I also do spot checks before and after meals. I plan to have a slice of cake to celebrate my wife’s birthday and I will see what kind of spike I get. I will also see how fast Keto can get me back on track. In fairness my doctor has always advised me to watch my diet with my medications but he never told me I could eliminate diabetes with diet and without any medications as I am now attempting to do. It’s my sense of self determination and self responsibility that is making all the difference. Changing the assumption that my body was defective to the knowledge that it is not my body but strictly my behavior.

    Time to test apple cider vinegar and lemon with water (maybe a little cinnamon too...not bad with a little stevia). Lots of people are talking about using the drink before meals to cut the sugar spike in half. Does it effect ketosis??? I do know a man who lost a ton of weight using the drink.
    Would love to see you test it. 1 tablespoons of ACV and 1 of lemon juice...8 ounces of water. A little cinnamon. I've been using it the last couple days and it feels like it's raising my glucous. I get that fog in the head. You could drink it before a burger.....use the specs from your burger video to compare the glucose spike.

    Animal fat slow and reduce the peak of blood sugar level , but the real hero to stop the extremely peak and keep it in normal level is fiber from greens and none starchy vegetables. I tried it for me in many different high carbs food, and some friends and worked perfectly.

      Usually eating rice will spike blood sugar level extremely high, but the same amount of rice spiking to 250 if you eat it after eating the green leaves and non starchy vegetables 5 cups minimum it will never get more than 180 or less.
      You can try it for sure as our friend teaches us. Plus there is a tricky method called buffering high glycemic index carbs with low carbs glycemic index, also will help you to limit the spike of blood glucose level to a lower values.
      In the end, you should decide and select the right method and lifestyle to control and keep your blood glucose level within the limits based on your body behavior. And only yourself can know that

      Again, I specified fiber from green leaves and non starchy vegetables.
      Not fiber from grains or beans or sugary vegetables or fruits or even rice.
      And if you google how to cure leaky gut, it will show you directly stop sugar and grains, rice, non healthy oils and fat, fruits and starchy vegetables.
      And increase your intake of green leaves and non starchy vegetables and bone broth soup and healthy fats, to cure your leaky gut in natural way without medication or supplements.

      @@SomeTechGuy666 I don't know. I asked him once to test resistant carbs. I'd like to see his thoughts on that. Also, I bought some supposedly low carb bread, but in reality, it had just as many carbs, but they added a lot of fiber which they claimed reduced the net carbs. I imagine a slice of this sometimes is OK but really, the bread has to go for me. I'm not convinced about the fiber/carb thing.

    If you wanted a truly good experiment, then you should have only modified one variable at a time. Aka, don’t add extra protein in an experiment about fat. That being said, I’m glad you did this. Thanks.

      grawss usually going above and beyond is a good thing, but in this case it actually detracts from the experiment. This is because protein stimulates insulin release. Extra insulin would be expected to have a blood sugar lowering effect. He should have stuck with just fat, and it would have made the point better.

    Dennis, I was vegan for a couple of years and became diabetic with eating all the potatoes and rice. If vegans see this (their shi*will hit the wall and contest), they'll say I did something wrong and so on (I did not eat any vegan junk food too). The high carb vegan diet raised my blood sugar to dangerous levels. Now, I'm on my way to good health. I eat low carb now and I gave up potatoes, legumes and rice. I also limit my banana intake and other high glycemic fruits. Those foods are not for me. They can say whatever they want. Ik what my body needs. These "vegans" claim to be full of harmony and peace but yet are so mean and rude. What an example they portray. I'm sorry you received those comments. I appreciate what you teach. I have learned alot from you. Also, my blood sugar levels are back to normal. I truly appreciate these videos you upload. Ignore the hate. Love ya Dennis and wife. God bless.

      I assume there are a lot of vegans that are very nice and respectful people, but human nature gets in the way for many of them. Their food lifestyle is the the god that they worship and if you challenge that "god" you might very well get a tongue lashing from some of them. What they don't realize is that if they would shut their mouths for a change, be more respectful and/or simply talk about their own testimony about their own experiences they would get a hell of a lot more respect from people. I didn't go vegan because they lay a heavy burden of disrespect and strict/complex diet plans on people that people cannot abide by. I certainly felt that I could not take that. Right now I am on a modified keto plan with intermittent fasting, green veggies, no rice, no potatoes, no pasta, no bread and no sugar. I have lost 15 to 20 pounds in about a month and a half. I have kept my blood sugar and blood pressure down and gotten off Metformin, Glipizide, Lisinopril and Crestor. Part of my goal is to shock my doctor into thinking about all of this the next time I get a blood test which will be about mid February/March time frame.

      @DCD Read The Great Colesteral Myth. Statins may help you prefent a heart attack or stroke, if you are a man between 50 snd 60. However, they use what I call pharma math. Basically if 2 out of a 100 people die of a certain complication without a medication over a 5 year period, and 1 out of a 100 die with the medication, that is a 100 percent improvement. However, when it comes to risks that can lead to death from other things, they resort to real math.

      My blood sugar has not been above 140 (that is a spike for me at this point) for the past 3 weeks I have not taken any diabetes meds. I have been checking my BG religiously and don't see it go above that at all. It looks like I am averaging about 115 to 120, a little higher than I would like but running at about 5.8 a1c equivalent, I assume (I will also say I could be wrong). I could be higher overall so lets just say 6.5. That would be a BG of 140 which is not good, but again I only see 140 as a spike for me in the last 3 weeks so I am not sure why getting off the Metformin is a bad thing especially since it tears up my digestive system really bad. Crestor I will admit is the mystery at this point. It could very well turn out bad for me, but I think I would rather die of a heart attack than one toe at a time or crippled because of the joint pain it was giving me--fun stuff these meds are. Maybe they keep you alive just enough to be miserable. That's what it feels like to me. Broke and miserable.

    Could you find time to test the effect of a reheated potato on blood sugar? I heard that cooling a cooked potato and reheating it later will minimize any blood sugar effect that happens.

      What you'll find is that you'll peak higher. The reason why is the more or longer you bake a potato, the more you break down the starches into simple sugars. Complex starches are slower, but cook them too long and you've broken down the complex starches to simple sugars.

      I started of at 90 and after eating my dinner and checked in 2 hrs time it was 112 .

    Absolutely agree...have had the same experience my self with sweet potato...while sweet potato may have a lot of healthy nutrients...they are a no no for type 2 Diabetics...if you want to keep your blood sugar down...I got your " 60 Ways to Lower Your Blood Sugar" book very helpful ...Thank You

    Fantastic test ! Excellent result.
    But I'd like you to repeat it, this time equalizing the calories between the two tests. The second meal had twice as many calories. What would the blood sugar spike be like for the same calory intake? Halve the potato in the second meal and repeat it, please ?

      There is a limit to how often I will allow my blood sugar to take off that way. For now, I am done for a while. But I did do one more potato test that will be posted next week, in connection with the idea of resistant starch.

You would just have to do the half potato with butter + bacon. Much easier on your system. I'm guessing you'd see a peak of less than 150 because I'm guessing the butter and bacon contributed next to no blood sugar rise.

      @@beatdiabetes3 calves help with explosive movements like jumping or sprinting. Also work together with hamstrings for knee flexion. I like jumping rope for calve work. Super functional.

    Hi Dennis. I like your video but I think the protein you ate, namely the bacon, may have skewed the results. Protein is not blood sugar neutral and this is probably why your blood sugar wound up higher after two hours eating the bacon. It would have been interesting to see how it turned out with just the butter added to the sweet potato.

    I’m sorry that you had a bad experience with vegans in your comment section. I’m a vegan diabetic myself, but those people don’t speak for me. I have a tremendous amount of respect for you despite our different approaches. We have a lot in common apart from our diets. This is what I can tell you from my experience eating a plant based diet. The key to seeing impressive results is that you have to eat very low fat for several days before you start to see results. A food tracker like cronometer works great for this. What you want to do is eat less than 30 grams of fat a day, every day for let’s say a week. During this time the lipids built up in your liver and muscle cells will start to drain out, and then insulin will have an easier time delivering glucose into your cells, and your spikes will start to drop dramatically. Before that happens, you will spike. It’s about setting up your body to process carbohydrates efficiently. As someone who has tried both a low carb diet and a high carb whole food plant based diet, I can assure you, the plant based approach works quite well, but it’s not something that can be accurately documented in a two day back to back test. Anyway, dietary lifestyles are a controversial subject where emotions can get heated, right up there with politics and religion these days, so the last thing I’m trying to do is get into an argument or tell anyone else that my way is better than theirs, that’s pointless. Just thought I’d share a little perspective from my angle and experience. Take care!

I have read and seen enough testimonies of people that were helped through a plant-based diet to know that there must be something to it - although I do not see this as ideal. But if it has helped you to get your blood sugar levels in line, I thank God for it.       Have you seen feldman protocol from cholesterolcode.com? He tested himself eating 5000 calories mostly fat for 3 days and his lipid result became "healthy". I tried it myself when my doctor told me my LDL is too high. The result was very excellent. It is a good cheat if you want your doctor off your back. Just make sure you fast at least 14hours before the test, not just 12.

      If the cells accept more sugar after a low fat diet, that still means that you have too much sugar that needs to be stored. Wouldn't the cells be better off not having to store this sugar? I see a lot of reason in the argument that our DNA was never adapted to eating the foods that became available much later with developed society.
      The job of insulin is to get the sugar out off the blood.

      DannyB1954 The sugar isn’t circulating in our blood stream at that point. Insulin’s job is to transport glucose into our cells where it can be burned or stored for energy. I don’t advocate eating anything other than plant based whole foods. That doesn’t just mean no animal products, it also means no oil, no processed grains, no sugar, no cereal... none of that. Fruits and vegetables. That’s my approach.

      @@TheDjlivingproof for the sugar to get to the cells, it would have to be in the blood. For me fruits spike my blood sugar. Before refrigerated shipping, people only ate them in season which fattened them up for the winter. All stores now have them year round. The job of insulin is to get the sugar out of the blood.

    Your experiment seemed to demonstrate that eating potato only gives a higher spike initially, but lowers it back to normal at 2 hours.
    After eating the fatty potato, the blood sugar was still over 130 at 2 hrs! The experiment actually convinced me that it’s not dangerous to eat a plain potato....

    Great video; thank you! I pretty much always eat a low carb keto diet rich in fermented foods & beverages and sufficient animal proteins & fats. And while I don't forgo eating potatoes, rice, pasta or noodles, any of these foods that I do eat undergo a long fermentation process to ferment out all sugars & starches & lectins before I consume them. Recently, however, I was compelled to test the cooled cooked potato diet for three days and while I'm sure my blood sugar levels were unaffected, in fact they were quite stable, by day 2 my joints ached, I was bloated all the time, the pressure on my triple prolapse was excruciatingly painful, I woke in the middle of the night 1-3 times to urinate, I experienced sinus mucus & phlegm as well as a chronic headache, and I GAINED 4 pounds - all due to indigestible lectins! So while cooled boiled potatoes may be good for not affecting sugar levels, like you I will never eat another potato again unless it's gone through a very long fermentation process. It is so NOT worth it!!

    Continue to enjoy your tests. I did a search of your channel, and couldn't find anything mentioning the Kraft Insulin Assay test. Have you ever considered doing that test, which would match up your insulin response with your glucose response? It may strengthen your point if you had a delayed, spiked, or sustained insulin response (In other words, an inordinate amount of insulin was required to bring glucose down, it either spiked early or late, and potentially stayed elevated well into the 2-4 hour period?).

    The reason your sugar levels didn't drop as quick as the potato alone is because of the added protein not the fat.
    Had you just used butter on top of the potato the 2nd test your blood sugar levels would have dropped similar to the 1st test without the high spike.

    It's those spikes of up and down that make people feel fatigued and crave more sugar. So a good way to avoid those cravings is to actually have fat or protein in the meal. I wish we could be vegitarians, but it looks like it is unhealthy for us at the moment. I look forward to the time when we can make healthy plant based foods and proteins and not have to kill animals. Thank you for your videos. They have helped me.

    If you had eaten the skin, you would have gotten better results. The fiber would have slowed down the spike.
