※These sharpeners seem to be sold more expensively outside of Japan. I believe you can find cheaper ones that are decent online as well. Zwilling J.A. Henckels also has good sharpening stones which I have used before. Unlike the ones I used in this video, you don't need to soak it in water to sharpen a knife (but it still needs to be wet).

Sharpening stones come in grits, and these two grits would be enough for a normal household knife. I used grits 1,000, 2,000, 5,000, 8,000, and 12,000 in this video. The higher the number, the finer the sanding and the sharper the knife will be.

That's actually probably the least impressive part of the video. Cutting water bottles has less to do about sharpness and more about edge alignment. I've cut through 5 with a relatively non-sharp machete. The tomato though, holy hell that's sharp.

There is no "sharper" blade. The sharpest blade is the one that was sharpened the most. With fine enough grit sharpeners, a little paring ire could be sharpened more. They are both steel blades, just differing shapes and sizes. Those differences are for balance and utilization, and have no effect on sharpness.

You can sharpen even a $1 knife very sharp, but the difference is the sharpness will not last long as a more expensive knife and you will need to sharpen it more frequently. :)

I can't guarantee anything but I saw some video sharpen their knives with a back of a ceramic plate. But definitely get better results with a sharpening stone or other sharpening tools.

Betty Liu Most ceramic mugs' bottom rims don't have a glaze and make for a decent makeshift / emergency sharpening stone. Just turn a mug upside down and sharpen the knife on the rim (it's a bit more convenient than a plate).

Yes. The difference is just how long the edge will hold basically. I got 2 identical chef knives. However, the blade is made of rust free steel on one, and Chrome Vanadium steel on the other. Obviously, the rust-free one gets dull faster.

But it's a Japan knife they can make it into the strongest knife ever
Usually they would use a cheap martensitic stainless for kitchen knives but stainless steel has excellent wear resistance, even the cheaper series such as the 410 has excellent wear resistance. So unless they're using low carbon stainless like 304 or 316, the edge would hold for a decent amount of time depending on usage.
