This video will guide you how to easily roast eggplant / aubergine / Brinjal / Baingan / Kathirikai in the Air Fryer. Two easy methods when you struggle to fit a huge eggplant into the air fryer basket. Tips included for beginners who are learning to cook.

Ingredients:
2 Big whole Eggplants
Tips: You may roast both the eggplants whole with skin, together in the air fryer as long as it fits when you close the basket. For best results, air fry for 20 minutes. If the eggplant is too big & you struggle to close the basket, then you may cut it. Once roasted, Eggplant releases water which is normal. Both methods are equally good to create a variety of dishes.

I am so happy I found you and this most useful video. I love your presentation and way of speaking and guiding. For the large size eggplant that requires cutting, I wonder if placing the pieces cut side down might be better and avoid over browning. What do you think? Also, can we place cloves of garlic into the cuts we make in the garlic?

Thanks for this wonderful recipe..have been searching since long for how to roast eggplants without soiling the gas burner (on which I roast d eggplants)..just wanted to ask..what happens to the liquids that drips from th eggplants as they are roasting?? Don't we need to put foil underneath the eggplants so the liquid doesn't drip in the airfryer?? Also can we grill the eggplants in microwave??

Do the eggplants taste burnt with this method?
This is what I like about eggplants and the oven does not create the taste for me
Looking at your video I'm planning to buy an air fryer. Can we air fry green peas? Won't they go down through the cooking tray

My air fryer has a setting for roast, bake , air fry. Do use the air fry setting or roast setting?
I tried it with roast setting and it was perfect
If you have the roast setting, try that. It should work 😊

I tried this. The brinjal/eggplant/aubergine came out very soft but absolutely no smokey taste which is what I was looking for. Maybe it has to be done straight on the flame to get that taste?
Thanks for trying. It may also depend upon the air fryer. I did get a bit of smokey flavor but not the same. Try charring it over open flame.
