I got the big one from you a couple of weeks ago. Used it last weekend with some belly pork and sausage. Great results. Had water bath in there and it sat at 240 (external probe using those eyelets) without any faffing around. Previously used an offset and the ProQ was way more user friendly.

any tips please new to this but ive done what you have had all lower vents open and top vent with wind and it only gets too 75'c max what am I doing wrong

I have a Frontier - when I cook I generally leave top vent fully open all the time (close it a smidgen if temp gets too hot).
With the bottom three, I have the back one closed, and the front two about a pencil width open, and they are the two I adjust to control the temp.
Make sure you use enough fuel, too - once I didn't have enough and the smoker struggled to get up to temp. What the guy uses in the video is about right. You want enough of a gap in the middle so that when you pour on the hot charcoal, there's a bit of a mound, but not so much that the section above it won't shut properly.

I would have had them a bit lower 220 for four hours and then sprits and wrapped but back in the bbq NOT THE OVEN and open the vents drop that heat

Smoke only penetrates for the first 4-5 hours. After that an oven does exactly the same thing, thus finishing in an oven is fine as long as you regulate temp and baste.

They were resting in the oven. Once the smoke has done its thing and its wrapped, redundant using the smoker.

I don't think you talk too fast at all. The music was bloody annoying though.

      I disagree, music was fine

@@matbro95 you’re completely right. I just now realised that when I’m doing a cook, I too listen to a 5 second long piece of electronic elevator music that loops incessantly and is played at a volume that constantly distracts from any conversation being had.

This video did not do the smoker any favours, I'm still probably going to get one but those ribs looked way to dry

I really wanted to like this video as I'm about to buy a ProQ but the music is irritating and the commentary is too fast and unclear.
Sorry but I just couldn't watch it with the sound on.

Turn off the background music so I can understand what you're saying. Also, don't talk so fast.
