For anyone making this. I would cut the butter into 1 tbsp pieces, melt one or two pieces of butter, add your cream, then add the rest of your butter one piece at a time, stirring constantly. Adding and melting your butter one at a time while stirring constantly will help the butter and cream emulsify together and your sauce won’t be broken and oily feeling.

This is actually a 6 years old video, but I just learned how to Make a simple easy Parmesan creamy pasta. Love this video The cook did not use a lot of Salty seasoning. Yes she was correct the Parmesan has a little sodium in it . I would not use any seasoning, only a little parsley . But to each their own , some like their food more seasoned and more bursting flavors, 🤷♀️. I say whatever meets your fancy 😁😁😁😁😁😂😂😂😂😂😂😂💗😁😁😁💗😁😁😁😁✌🏾🤷♂️

Way too much dairy. I was taught to first make a lightly caramelized roux, then add milk and once you have the thickness right add the cheese. It takes just a couple tablespoons of flour to reduce the need for massive amounts of cheese, thus making it thicker and healthier.
yes...cold roux, hot milk infused with spices and herbs then strained off, then cheese... but flour is not really making it healthier than cheese unless almond flour or something

Also most of the time I treat cheese and red meats like a seasoning using them as sparing as posible. You get use to the reduced amounts of things when you develop a taste for the veggies The soup companies use corn starch in everything they thicken, that's where I began to limit things in my food, while cutting some out completely.
