Did this for my Italian partner and it went well. Very very well. I had to add some salt though. Be careful not to add too much and ruin the whole thing but definitely needed some salt. Also added some chopped parsley and the cheese I put in before and after the pasta was put in. It was so good.

Even adding other things like nutmeg shallots, garlic, etc. It's a "Cream Sauce with parmagiano" NOT "Alla Alfredo"! Authentic "Alfredo" is equal parts butter and parmagiano, PERIOD! Black pepper is fine! I was told this by Chef Renne ("The Black Hat Chef" who had a PBS show in the 1980s and quite an ego!) many years ago after a few cocktails! He worked at Alfredo Of Rome! Don't even get me started with what most places call "Carbonara"! NO CREAM PLEASE! I truly enjoy your videos and stories! Mangia Bene!
I love Nick Stellino, but the metal spoon in the pan is driving me crazy --- With all due respect Mr. Master Chef -- wooden spoon , right? Nice easy recipe though - I add a lot of Parsley at the end, and some Red pepper flakes on top.
