The Best Chocolate Walnut Cake Recipe

This is my very first video 🙂. I am not a professional, but a mother of 3 children and I love baking cakes for my family very often ❤️.

Cake Tin Size: 8-9" / 22cm (In the video I used 10 eggs and a much bigger cake tin)
Ingredients
Cream:
200 gr unsalted block of butter
300 gr Good quality dark chocolate (I use Belgian - Belcoade 55% dark chocolate)
6 Egg yolks
100gr sugar
100ml water
1 sachet of sugar vanilla
1. Boil the sugar and vanilla sugar with water to form sugar syrup. Turn off the stove and pour in the chocolate. Mix until melted all the chocolate, then with a constant mixing add one by one the egg yolks. Needs to be still warm the chocolate during adding the egg yolks.
Cool it down perfectly cold (I usually speed up with cold water).
2. Mix the butter until become white and foamy texture, then mix, combine well together with the chocolate cream.
'Cake's Sheets':
6 Egg Whites
300 gr Sugar
400gr Grounded Walnuts
Start with grind the walnuts.
1. Put the egg whites into the mixing bowl then add gradually spoon by spoon the sugar, during mixing with mixer, until become really hard.
2. Put the walnuts into it, carefully mixing until well combined.
3. On baking paper (make 5x) draw around a round cake tin. Spread oil or butter on it before pour the 1/5 of mixture. Spread it evenly and bake it around 15 mins on 180 degrees.
Leave it to cool.
Put together:
Spread each of the walnut layers with 1/5 of the chocolate cream, outside as well.
TIP: I turned upside down each of the walnut cake layer and pull down the baking paper carefully because mine is really big, otherwise cannot transfer without breaking it 🙂. (I apologise, but I accidentally cut off from this video tutorial)
Decorating the cake:
After refrigerating for about an hour make the other Cake Topper Chocolate layer ready for the top.
We like this crispy dark chocolate on it. Not bitter at all because this Belcolade Dark Chocolate is really good quality and just melting perfectly, amazingly delicious 😋😍!

1. Melt the chocolate then add 1 tablespoon of oil for 100g chocolate. Mix it well, then pour top of the cake. Spread it with knife or spatula.
2. Decorate with your favourite topping: white or milk chocolate sprinkle; walnuts; pistachios , etc. TIP: After cooling down the cake, the chocolate becomes very hard so I always cut with hot knife ( place the knife it in hot water jug, wipe to dry)…
