Yeah Bergen County is the epicenter for New Jersey. As of Saturday we were only letting three people in the store at a time. That might be changing next week to curbside pickup. I get a little concerned at times. It's only going to get worse in the coming weeks. The President is considering putting the tri-state area on lockdown. Hey Jay, yea got half way thru the cook battling the temps before I saw that open guru port. I think I covered up the wsm last time I used it with the guru without putting it back in. User problem. I fess up. Still came out okay though. I hope I'm up to wrestling the mule plow this year. Been having some med issues. The tiller is no problem but you have to hoss that mule a little. We shall see. Gettin close. I now have about 15 purple martins in the gourds. So much fun to watch. I think that is something you would like. You know, stuff old guys do. LOL

You would really enjoy the wsm. Such a versatile cooker with so many options. Highly recommend it, especially if you add the grilling bracket level 5 inches down from the top grate bracket. This allows you to use it as a kettle style grill. then come all the accessories and after market stuff. Like Jaxx says.....Doooo ittttttt !!! Thanks Kent. Have a great week.

I have the Gateway attachment. I am currently saving up for the Cajun Bandit cylinder extension to get the ribs further away from the coals. The hardest part of hanging ribs in the WSM is keeping the lid open the shortest time possible. Flare ups happen so quickly in the WSM.

Gateway would have to be selling a bunch of the rib hangers to wsm customers. Not sure why weber quit with theirs. They lost a lot of business. Guess that's one item they were willing to let go to after market suppliers. Thanks for watching.

Glad to see Baby Back in action! (LOL see what I did there.) The ribs looked great. If you don’t mix up your own rub and seasonings you’re cheating. You half way cheated in this one by making the sauce and using store bought rubs. That’s OK I cheat too sometimes, in-fact my next video will be a whole cheat with hanging ribs. Using prepackaged rub and sauce. I know the Uncle Steve’s Shake is good. I’ve never had the other one though. Both racks of baby backs looked good.

You won't go wrong with either choice. I love the set it forget it feature in the PBC due to no controls. The bars are part of the venting design. Then the bottom vent is set according to your elevation location. The wsm is like android phones. You can change stuff around like you want it. Lots of options, accessories, and mods. The ribs looked great. I have the Gateway for the 18” for my WSM. I cut down some rebar to fit in my vertical Pit Boss to hang ribs. They were great. You did those Walmart beef back ribs. Low long did that cook take? I have a rack to put in my pellet smoker today. Living in an apartment they frown on me firing up the charcoal smoker.
Yea the Gateway racks work great in the wsm. You did something kinda like Louis at R Shack with the Pit Boss. That was a good move for hanging meat. Sorry I didn't see your post about the beef ribs from W-Mart intime. Didn't take long. They were done before the spare I did. Prolly about 2.5 -3 hrs they were so thin.

Hello there, Thank you for the video. I just got my WSM 22 inch Saturday. Do you think hanging the ribs makes a difference? I ordered a rib hanger from Hunsaker. I know that I can do more ribs, but wondering about the taste outcome. Do you have any thoughts on that? I have a BGE and have done ribs on that and enjoyed it, but the WSM is new. Haven't even cooked on it yet. May try some drumsticks on it tonight because that's what we have, but definitely interested in doing ribs. Love ribs.
Well, I do them both ways. I'll say my favorite ribs are hanging in the PBC, however you can do the same thing in the wsm. Hanging over the open pit allows the juices and fats to drip down into the hot coals, then vaporize that flavor back up into the meat. It makes for some great ribs. Just make sure you cut the temps down by closing down the bottom vents to about a pencil width to begin with. You may even end up closing down two all the way and leaving the third one cracked. You will learn by using it in different setups. If the temps go over 270, turn down the top vent about half. That should keep you in the park. A water pan can help in temp control due to the water heating up and acting as a heat sync. The heated water will hold the temps more constant, but it's a trade off in that special flavor from the open pit. Try it both ways and see how you like it. Hope this helps.

I got the 22 WSM because I can potentially cook more ribs on that than my BGE. However, with all this Corona stuff, it may be awhile my family may come by. Gateway would have to be selling a bunch of the rib hangers to wsm customers. Not sure why weber quit with theirs. They lost a lot of business. Guess that's one item they were willing to let go to after market suppliers. Thanks for watching.

Hello Rob, yea the plug for the guru port threw me a curve ball. Didn't realize it until half thru the cook. No wonder the temps were spiking high. lol I kinda like 2.5 hour ribs though. They still turned out good, especially with the huli huli sauce. Thanks and have a great week. Keep away from C.

Hi Phil, Will that Weber Gourmet Grate fit where the standard lower grate goes on the WSM 22"? I'm asking because I know that you have done some modifications to your WSM. I'm hoping that I won't have to do anything extra for now. I do like how I could hang some ribs or whatever and then cook some side dish on that Gourmet Grate. Thank you for sharing and showing.
Glad to see Baby Back in action! (LOL see what I did there.) The ribs looked great. If you don’t mix up your own rub and seasonings you’re cheating. You half way cheated in this one by making the sauce and using store bought rubs. That’s OK I cheat too sometimes, in-fact my next video will be a whole cheat with hanging ribs. Using prepackaged rub and sauce.
I know the Uncle Steve’s Shake is good. I’ve never had the other one though.

Hello John. Hope you and yours are doing good and staying safe from Corona. JIF's side dishes are just as important to our meal as the protein. Always something good. I have a CB 10 inch ring on the way too. We shall see what we get into with that. It'll be fun trying out different things and playin around with it. Yea, us old guys need a sweet thang with us in front of the camera so people will watch. LOL I'm hoping I"ll be up to handling the mule plow. The tiller is not bad, but it takes some umph to hoss that mule. I've been having some med issues of late. We shall see.

You won't go wrong with either choice. I love the set it forget it feature in the PBC due to no controls. The bars are part of the venting design. Then the bottom vent is set according to your elevation location. The wsm is like android phones. You can change stuff around like you want it. Lots of options, accessories, and mods. The ribs looked great. I have the Gateway for the 18” for my WSM. I cut down some rebar to fit in my vertical Pit Boss to hang ribs. They were great. You did those Walmart beef back ribs. Low long did that cook take? I have a rack to put in my pellet smoker today. Living in an apartment they frown on me firing up the charcoal smoker.
Yea the Gateway racks work great in the wsm. You did something kinda like Louis at R Shack with the Pit Boss. That was a good move for hanging meat. Sorry I didn't see your post about the beef ribs from W-Mart intime. Didn't take long. They were done before the spare I did. Prolly about 2.5 -3 hrs they were so thin.

Hello there, Thank you for the video. I just got my WSM 22 inch Saturday. Do you think hanging the ribs makes a difference? I ordered a rib hanger from Hunsaker. I know that I can do more ribs, but wondering about the taste outcome. Do you have any thoughts on that? I have a BGE and have done ribs on that and enjoyed it, but the WSM is new. Haven't even cooked on it yet. May try some drumsticks on it tonight because that's what we have, but definitely interested in doing ribs. Love ribs.
Well, I do them both ways. I'll say my favorite ribs are hanging in the PBC, however you can do the same thing in the wsm. Hanging over the open pit allows the juices and fats to drip down into the hot coals, then vaporize that flavor back up into the meat. It makes for some great ribs. Just make sure you cut the temps down by closing down the bottom vents to about a pencil width to begin with. You may even end up closing down two all the way and leaving the third one cracked. You will learn by using it in different setups. If the temps go over 270, turn down the top vent about half. That should keep you in the park. A water pan can help in temp control due to the water heating up and acting as a heat sync. The heated water will hold the temps more constant, but it's a trade off in that special flavor from the open pit. Try it both ways and see how you like it. Hope this helps.
@@progers5019 Oh man, I can hardly wait to try the ribs. I just watched several of your ribs videos - you are prolific! Any time you have extra ribs, holler. I got the 22 WSM because I can potentially cook more ribs on that than my BGE. However, with all this Corona stuff, it may be awhile my family may come by. Easter will be here soon and I'm sad that this Easter will be so different. God Bless and thank you for your advice on the WSM. Appreciate it so much.
