He was right in saying this recipe was INSPIRED by pancit Cabagan. I was born and raised in Cabagan, Isabela but I’ve never seen anyone from my family put cornstarch in our pansit. We used salt instead of fish sauce, and water instead of chicken or pork broth (it was not a staple item in our kitchen). I am not judging here, but just pointing out the differences in our cooking styles. I thought the noodles looked authentic until he mentioned egg noodles. One of my aunts sell pansit noodles which she makes from scratch, and she doesn’t add eggs to the mixture. The noodles can be dried or cooked immediately. It also cooks quickly, as opposed to the noodles used in the recipe. It is usually added a few minutes before we eat so that the noodles are not overcooked. I have seen a lot of versions of pansit Cabagan that IMO are overloaded with toppings, which are nice to have but not necessary to make a delicious pansit. The type of pansit I grew up with was simpler than this - it was made up of well-seasoned broth with pork or chicken (which I prefer) plus the noodles. Vegetables and other toppings were added if these were on hand.
Im from cabagan... and sorry to say that the noodles you used is NOT the Authentic Miki Cabagan and the way you cook is NOT the Cabagan Style✌️😊.. i respect though what ever recipe you cook.
You can cook it the way you cook sardinas with noodles, just cook aromatics, add meat and season it, then add water let it boil then add noodles then vegetables.
Pag sinabing Pansit Cabagan, gamit po na noodles ay Miki Cabagan. Toyo ang ginagamit, hindi patis. Hindi po pinakukuluan nang hiwalay ang miki. Pag ipapasubok mo yan sa mga taga Cabagan, baka titikman lang nila.
