- An iconic dish of Northern Thailand, "sai ua" is one of the most flavourful sausages I can think of. The pork is mixed with an aromatic curry paste, grilled, then served with sticky rice and fresh veggies. Yum!
Making sausages doesn't have to be a lot of work, though. Once you make the mixture, if you don't want to go through the process of stuffing the sausages, you can make patties, balls, or make "caseless sausages" I like showed in the video!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes. This is literally my favourite thing to eat of all time. I searched the whole of Chiang Mai for the best Sai Oua I could find. Ended up finding an amazing spot outside a temple near my old house in San Kamphaeng. I may even get a tattoo of Sai Oua around my arm ;)

I live in Brazil, so I couldn't find the galangal. So I found the courage to ship some to try and cultivate it!
I just made my first batch. After cooking up just a bit of the mix to taste it I realized that something has been missing in my life -this stuff! Wow.

i added cornstarch and bell peppers, dont ask but i wanted some less spicy and more crunchy feel to it, and i had run out of lemongrass, but IT STILL WAS THE BEST EVER THING IN LIFE OMG!!!

We just come back from Chiang Mai and we made this at a cooking school. We had about 20 chillies...awesome...also had from street vendor and in a restaurant.
The sausage casing was not too much drama, just vital to clean and prick skin before cooking ...
Tried it 2 days ago, made it in fat burger form, baked it in a anti-stickpan, they taste really like the sausage i ate in ChiangMai, when they cooled off i sliced it in cubes of 1cm and put it on a plate with a sweet&sour saus and the dipsaus you make with the salad rolls, it was the hit of the evening

Thank you so much for sharing this recipe and your cooking tips. I have a standing Sunday brunch to entice my sons (28 & 24), to come home to visit. I LOVE serving various breakfasts from around the world so that we all get the opportunity to see what people eat for breakfast around the world (but honestly we love Asian the best because the variety and spices are just wonderful). Now the boys have started asking to bring along some of their friends because they all appreciate the exposure to the wonderful world of Asian cuisine- and who doesn’t like having a lazy/relaxed Sunday feast with good coffee/Thai tea, with family and friends? I can tell that this sausage recipe will be wonderful. Can’t wait to entice the boys with it. ❤ Alberta.
These sausages are a must try, Every market in Chiang Rai will have someone grilling these. They are incredible.
For lime leaves, look in the frozen section at Asian markets, they can be hard to find, but worth it.
I will definitely give this recipe a try! During my first trip to Thailand in 2003, I fell in love with Chiang Mai sausages. In 2017, I tried my first Lao sai oua sausages at a Lao temple Water Festival in central CA and loved them, finding the taste similar to the Chiang Mai sausage (though less spicy). Last November/December I was in northern Laos and had the authentic Lao sai oua with sticky rice at the Luang Prabang night market, and later from street vendor stalls in both LP and Muang Ngoi, and have since become hooked on them. Looking forward to making them myself!
I love this kind juicy spicy sausage and full of aroma. I’m from Laos and we have a similar Pork sausage. I like the idea without the casing because I like the taste of caramelize and crispy. I can pan fry it.

pai!!! you can find sausage casings at most grocery stores or butchers. you can also find it on amazon and it arrives in a block of salt, you just have to soak them in water for like 10 mins to use. i made sai krok issan today but i want to make this recipe later. love you mak mak!!!

Smart tip about forming the sausage.
Sai Au was my favourite growing up and it still is to this day! My aunt is the best at making these (Lao style) in my family but she loves to use chopped up pigs ear - there's something about the texture that is so satisfying!
I've been waiting a long time to get up a search on how to make this one. Incrediblly delicious and the most memorable from the Thai restaurant I used to work at in Israel (Thai House), Sai Ua, just like hot thai Pai is the best of the best

Looks delicious! Seems very different from the Sai Oua that I’m used to. In Eastern Myanmar we don’t add turmeric or gapi but add lots of garlic and unfiltered fish sauce. Looking forward to try this variation.

I just made my first batch which was very simple thanks to your recipe. My sister-in-law who is from Bangkok said the flavour was great and my brother-in-law ate 3 links that I prepared. I did use your plastic wrap method but will use casing next time and place them on the grill rather than broiling them. Thanks Pai

These are my favorite sausages on earth
Try stuffing large squid with the sausage mixture - I chop up the tentacles finely and include them in the sausage. I brush them lightly with oil, then grill them.
