The first half cow we bought was a young cow, too. The filets were so small lol. I just received another half about a month ago and it was considerably more volume. I have a large stand up freezer and the cuts filled two shelves plus about 100lb of ground in the bottom basket. I had a lot of the roasts made into ground bc my kids are more likely to want burgers or tacos than pot roast. I love that we can customize the cuts and thicknesses directly with the butcher.
The butcher our beef farmer utilizes uses some sort of freezer butcher paper to wrap our meat. The farmer we get pork from uses plastic food saver type bags like yours. I really prefer the paper, It stacks nicely in the freezer and keeps it from getting ice crystals sometimes.
Whew, I wish I had the space for even a quarter cow. Glad you were able to stock up. Can't wait to see your pig delivery. You can shape your ground beef to burger patties, I'm sure to know that already ;--)) I hope your head heals quickly. Be well.
I don't eat liver, so I passed on it. As for my forehead, I missed a re-rack of a barbell on an incline bench press at the gym and hit myself in the head. I was fine but the gnurling of the bar did that to my forehead.
@@practicalcarnivore6093 I ordered oxtails from my butcher. I went to the cashier and said "excuse me, how much?" . I bought it because I ordered it and there was a pice change in the meanwhile. Tail bones, grizzle, collage and a tiny bit of meat was the same price as steak, 13.50 euros per kilo. It made absolutely amazing broth.
I am afraid to get that much meat at one time. I live on the South Texas coast where I need to worry about hurricanes and power issues. A couple times in the last 10 years I have lost power for up to 6 days. Yes, I could get a generator, but gasoline has also been out during those periods (gas stations also had no power after a day or so on backup generators).
Dr. Stine, a question I've been meaning to ask: What do you usually eat on Fridays? I share the same faith as you and I have been tripped up by choices during fasting periods. I usually end up with way too many carbs and not enough protein.
Hopefully by the time I am buying a full cow I will have a trailer and a pasture area in my yard to give the animal a place to eat and rest before I send it to the freezer.
I was curious what brand of Pellet Grill you have. I bought a Members Mark Pellet Grill from Sam's Club. I really liked it until... It broke down at about 60 days. I pretty much used it every day cooking Rib Eyes. The manufacturer want me to do all repairs. I'm tired of it. Now, trying to get my money back.
Single, in hurricane country so I’d need a generator to keep the freezer running, I eat about a pound to a pound and a half of beef a day (mostly sous vide roasts or burgers with the occasional steak). This isn’t the best part of Florida for local beef: too far south, too many people nearby so there’s more demand than supply. Probably not practical for me to buy even half of a large calf.

If you get back up gasoline make it non ethanol kind . It won’t go bad. My problem is it is alot of money at once my choice is clearance meat.

I cut the t bone before cooking and separate the filet and strip. Then cook to appropriate temp. Then the bone goes to the dog. Lol. Good vid!
