Worlds Best Tritip for Christmas Dinner

This reversed seared Tritip is best cooked medium rare. I started on the smoker at a low temperature and let it ride until an internal temperature of 117 was reached. After pan searing and before slicing an internal temperature of 127 was reached due to an anticipated carry over cooking during the rest. Served with asparagus and mashed potatoes.
Myoglobin and garlic butter sauce filled the entire cutting board. Great for dipping potatoes in.
