That is definitely a comforting and delicious meal. Lancashire hot pot it’s definitely a classic and I love it. All those delicious carrots and potatoes to soak up the lamb gravy and the lamb is fall apart tender after roasting slowly in the oven. I’d like your addition of the tomato paste for a little extra richness
This was the best of the three or four lamb hotpot vids I've watched (and I even bought something from your Amazon links afterwards!) but I would have LOVED to see you cut into it at the end and ladle it on to a plate, just to see how oozy, unctuous and moreish it looked? I want to be able to almost SMELL the deliciousness coming off it. Thank you though, it was great

It's actually Bill Oddie (a true Northener) in the Ecky Thump episode ("Kung Fu Capers") where he describes his first meal in the Rochester Ecky Thump Temple as "Tripe, Black Pudding, chip butties and a piece of Parkin for afters." He later states that he will not stop the Ecky Thump take over of the British Parliament. "Nay, nay Chucky, I'll not stop now! Not for all Hotpot in Oswaldtwistle!!"
