- 韭菜鸡蛋菜卷是陕西省的一种传统美食,外层是薄薄的面皮,里面包裹着鲜香可口的韭菜和鸡蛋,有时还会加入一些其他的蔬菜。这里用蒸的方式烹制,口感柔软鲜美。
Steamed Chive and Egg Rolls, or "Zi Juan", is made by wrapping a thin crepe-like wrapper around a filling of eggs, chopped chives, and sometimes other vegetables. The roll is then steamed until the wrapper is soft and the filling is cooked. Zi Juan is a popular street food in Shaanxi province, and is often served with a dipping sauce made from vinegar and soy sauce.

For the dough: 面团:
-- 200g all-purpose flour 中筋面粉 200克
-- 90g cold water 凉水 90克
-- 1 tbsp veg oil 菜油 10克
-- 1.5g salt 盐 1.5克
For the filling: 馅料:
-- some Chinese leek 韭菜 适量
-- some eggs 鸡蛋 适量

看上去的确很象,但口感不同。肉笼用发面,口感渲软。这个用普通凉水和的死面,口感劲道。另外这个讲究皮薄。
