Sided the chops with my grilled granny smith rings cut to about 1/2 inch thick grilled on both sides with the same sweet rub with a little extra dark brown sugar added. It was a big hot with the chops.
fantastic and simple....tried it last night, just smoked with salt n pepper...dinner guests said they were the best chops they'd ever eaten. Next time I'll try a glaze...thanks!

I searched UA-cam and this was the absolutely best video on how to do pork chops on the smoker! Thank you becuse this was awesome! My chops turned out perfect.

what did use use in the skillet for oil when you reversed seared the pork chop?
My go to is usually avocado oil! Any high-heat cooking oil will do though.

If you're familiar with the smoking on the kettle, I'd say look at the Weber Smokey Mountain or building an Ugly Drum Smoker.

Just keep using the kettle. It's an okay grill but a mean little smoker.

Your high-heat cooking oil of choice! You can use butter but you’ve gotta be fast!

I see some go for a target temp of 145. I always thought 160-165? Will Butter work at the end for a quick sear?
165 used to be the official recommendation, but the FDA has changed their position on it due to much higher standards in modern pork production.
