My dad was the fudge maker in our family. We didn’t have a candy thermometer so he used the cold water test. It was so much fun waiting to see who was going to get to eat the fudge from the water. I think he intentionally checked it enough that all of us had a chance to test it. Good old days! Merry Christmas!
I spray my smallest ice cream scoop (about 1" across) with oil and use it. It is quicker than using the spoon and they might be shaped more consistently round.
The best pralines i have enjoyed were in Texas from Katie, Texas. I have never tried making them. When I try to attempt, I will definitely try your your recipe.
Dear sweet Tammy and Chris. I am losing my sweet momma and I came home and was just beside myself. Then I sa down to watch some youtube to get my mind off things and I have to tell you how much spending time with you both in your kitchen(I feel like Im there ) has ment to me today. I know I have to let her go and trust the lord to bring her home to be with him and my dad...Im a mommas girl all the way and I can't think of her not being here with me. but she is 88 and she is tired of fighting cold and chf and its time. so I thank you for this video as it brought me a bit of peace this evening. Love Robin from Detroit
These look good and easy to make! 😊 My Mom used to have a heating pad plugged into the counter where she made the candy and set the bowl on top of that to keep the mixture from setting up too fast. 😊
Hi Tammy & Chris! Ooohh! Who doesn't LOVE pecan pralines!!? Simply cannot eat only one!! We made a batch of pralines a couple days ago using a buttermilk fudge as a base for the pralines. Will be making more pralines this week and will use your recipe this time. I know there will be no leftovers with my crew!! Thanks for another video y'all! 🌞
You make it look so easy, but there's definitely a technique!! When I'm asked for my recipe, I say sure then write down Chris and Tammy at Collard Valley Cooks! You guys are awesome❤️🔥
Thank you so much for this video! I just returned from New Orleans and want to make the pralines they were so delicious when I tasted them for the first time down there! However, just as you said, the ingredients are expensive and I would be heartbroken if I wasted all those ingredients not knowing how to fix the candy if it didn’t turn out right so thank you thank you thank you for this video! God bless
I would never have believed putting those chocolate pralines in the microwave would soften the candy the way it did. Wow! What a GREAT tip, Tammy!! I love pralines but I've never made my own. I'm going to make these. They look so delicious!
Mouth watering. And it doesn't look complicated. I think I have all the ingredients, too. My sister has been wanting pecan praline ice cream for a while. She can never find the ice cream flavor anywhere though. I might surprise her and make homemade pecan pralines and homemade vanilla ice cream and mix it up. I think I'll just buy a really good quality vanilla bean ice cream at the store instead. Yeah, it's really cold right now but I love ice cream in the Fall and Winter. My sister will freak out in a good way.
Just made these with out a sugar thermometer- I thought it went wrong on the middle but with a lot of beating it come together beautifully at the end. A much more forgiving recipe than I have used for fudge before
Wow what Great Helpful Hints!!! I think I'll try this recipe with cashews!!! I'm not a big pecan person!!! Thank you Tammy for sharing another Amazing Awesome Wonderful Recipie!!! Merry Christmas!!! God Bless!!!
Really good candy making tips Tammy, I use them all plus a few different ones, Domino sugar is the best but if I can't get some a quick wiz in the food processor does the trick. Have you ever noticed that using a slotted wooden spoon makes it creamier, I have.
My dad’s favorite candy!! Mary of Puddin Hill in Greenville Texas use to make the best Pralines. They were famous for their fruit cakes, but their pralines were just like homemade
Tammy, they look so good.I make the regular, but I haven't made the chocolate. It sure is a good idea to reheat in the microwave cause you really do have to work fast!!

I just love you; watching your videos…and your hubby seems great too! Yes whipping cream should hold up well if refrigerated prior to piping! 😜 hugs to you and Chris
I don't ever remember seeing a thermometer in our house while growing up, mama just used the old fashioned method by dipping it into cold water, and I still do today, those look yummy Tammy 😊😊🎅🎅🎄🎄
Add some cornstarch to granulated sugar in the blender to make powdered sugar. Commercial powdered sugar contains cornstarch to keep the sugar granules from sticking together.

Tammy I made these this morning and they are drying now. They came out so creamy and delicious. I was in New Orleans not long ago and bought some from Aunt Sally's they were horrible and I mean that too so grainy and had no flavor what so ever. these are amazing I love your recipe. I love all of your recipes for that matter. I'm wondering if you eat a Pineapple Casserol? I would love to know if you do would you give us your version on it. Try 2 buttered spoons for dipping. It goes very fast that way.
