  • I'm a New Yorker. I don't do chicken on pizza. But I had some leftover BBQ chicken and I live in California now, the home of BBQ chicken pizza, so I did it. It was good. At least as far as chicken with chicken and bbq sauce goes.

      I think every person who makes videos eventually develops a constant paranoia of the camera not being on. Just constantly checking the recording light.
      Of course you can't do that when it's on your head...

    I’ve always been a fan. Kenji is a cooking guru. But this COVID 19 induced “Kenji’s Cooking Show” is next level. I love the format and tone, and of course Kenji’s knowledge and wisdom....and dad jokes, of course. Even after things get back to normal and Kenji doesn’t have time to continue the show as regularly, I look forward to rewatching all of these treasures he’s putting out!

    Hi Kenji. Since I know you answer questions for a while after posting: how much to you organize / plan ahead for reusing and repurposing leftovers, or is it mostly something you decide on the fly? Similarly, do you and your wife plan for particular meals while grocery shopping, or is it more seeing what looks good and fits your mood?

      Leftovers get used on the fly. My wife cooks three meals a week and cooks solely from Sun Basket meal kits, which she likes. I cook the rest of the meals and do all the shopping.

    I just had a dream where I made a version of this using northern Alabama style white barbecue chicken for a "white pizza" 😂
    Then again, a buldak Korean BBQ chicken with cheese is a thing so maybe that could work too...

    After quarantine, I'm becoming one of the "funny-shaped" people you mentioned. I need to be able to hit the gym to work off all these pizzas I'm trying! Pickleball is helping a little, now that's open. :)

    hi, i work at a pretty nice pizza place called grimaldi's; just want to let you know that when you're stretching dough, (if you want a more even crust) focus on the edge of the dough first, (like when you're pressing down to flatten and stretch it out a bit) keeping the middle part a bit thicker, so that when you a using your method of stretching it out bigger, you reduce the chance of making a hole in the middle :)

    Pizza is good in most forms. There are few wrong ways to make it. I'm a New Yorker that loves a nice Chicago pie as much as a classic Neopollitan style pizza. The belief that there is real pizza and then everything else is tribalism at it's most laughable.

    I just decided I need to make Chinese bbq pizza with char siu instead of chicken, lap jeong instead of bacon/guanciale, and garlic chili cause mixed with hoisin as sauce.

    BBQ chicken pizza is delicious trash, like any stoner food. Embrace the depravity.
    A nice addition for it I've found is to mix bbq sauce with a tandoori spice paste and topping with white onions and peppers to roast in the high heat.

    Half way to 1 million subs! Definitely one of my favorite cooking channels on youtube because of the amount of knowledge you share, the POV camera to capture every step of cooking along the way, the feel good jokes, and so much more. Overall I find your content well-rounded and enjoyable. You inspire me to do more cooking and to not care too much about following a recipe to a T.

    Hey Kenji! Could you please do a video on the neopolitan style pizza with the cast iron + stove top method? I tried it out two nights ago and messed up so bad that all that came out of the broiler was the crust. I over corrected on the second try and it came out way too poofy and undercooked in the middle. Love all the videos, please keep them coming!

    Hey Kenji, just wanted to offer a correction, I believe that BBQ chicken pizza was invented by Ed LaDou while he was working at Spago. Ed LaDou was then approached by Larry Flax and Rick Rosenfield to create the menu for California Pizza Kitchen.

You had mentioned early on in the video that it was invented by Wolfgang Puck at Spago, but I just wanted to make sure that Ed LaDou is getting his proper posthumous dues as the pizza chef at Spago at the time and for creating the BBQ chicken pizza.

    I have two keys for correct BBQ chicken pizza:
    1) a BBQ sauce that is sweet, decently spicy, and not too thick. Smokiness isn't the goal.
    2) Cilantro. All the best ones have it, the rest don't.
    Red onion, jalapeño, pineapple, and bacon all assist well

    I had bbq pizza in Boston in 1996 and it was glorious. Nearly 25 years later I had one at a California Pizza Kitchen and it made me so mad I threw it away.

    My first encounter with BBQ pizza was in the early 1990s at Josés in Palo Alto. I'm also a die-hard New Yawkah, but José's pizza - and everything else - was wonderful. I don't know if the place is still there, but if it is ... go!

    Gayle's is claimed as the original BBQ chicken pizza BBQ sauce. There was another article from Lucky Peach talking about the dish's history and had another version of the recipe recommending using Gayle's BBQ sauce. Apparently the chef from Spago, Ed LaDou went on to start another restaurant after he left CPK called Caioti. Though, it seems like he may have invented the barbecue chicken pizza, not Puck, so taking it with him seems natural. There also seems to be another pizza he invented that seems strongly inspired by Peking duck, with duck and hoisin sauce.
    I also noticed both original recipes in Lucky Peach includes fontina, while it seems like CPK and Caioti use smoked Gouda instead.

    Plenty of specialty pizza pies come with chicken on them out here on Long Island. Maybe it's not the true NY style of regular cheese pizza but it's quite delicious! No shame in it as a fellow NY'er.

    Hey Kenji, quick history note: the BBQ Chicken Pizza was invented by Ed LaDou, who Wolfgaang Puck hired as the first pizza chef at Spago. He did create the menu for the CPK guys who are actually lawyers, not chefs. But rather than work for CPF he started his own restaurant, Caioti, which does amazing California pizzas, or at least it did in the 90s.

    I’ve also found you can get whole milk, low moisture mozzarella at what used to be Cash & Carry. The only thing is, you have to get a 5lb block of it. Can I freeze part of it so it doesn’t mold if I can’t use it fast enough?

    Love the daily quarantine videos. I just pulled a home cured coppa and runny egg pizza from my uuni 3... How do u like the gas fuel compared to pellets or wood? Also looks like the koda temps are a little lower than uuni 3 as my pizza would have been charcoal after 2min
