i like how he basically has 1 large carving board and a tiny little bit of counter space to the side of it as his whole prep space instead of some 10 foot wide studio kitchen island with all the ingredients already prepped in 20 different bowls and containers taking up a space the size of a small parking space.

Hi Kenji. I made these tonight for my husband, but an Indian version - no cheese, pav bhaji spices, garlic and ginger, green onion and cilantro in the patty. Made a mint chutney mayo, added tamarind chutney as sauces. Lettuce, on a bolillo roll.
This is outstanding. I am adding this into the meal rotation. It's so versatile! Thank you!

If you've never tried green chile, I highly recommend it. Anaheim is the California variety, but the crop was originally developed in New Mexico (and New Mexico green chile is still the best!). It's got an earthiness that you don't get from many other chiles, but it's also floral and smoky. As far as peppers go, it's usually pretty mild, but there are some cultivars that will leave you sweating and sniffling for hours. Green chile is also an amazing pizza topping; plenty of restaurants here in New Mexico serve it with pine nuts (piñons) and chicken! Green chile is also the same plant as red chile, but the red chile has been allowed to mature. Red chile is a lot smokier and usually more spicy, but you lose some of the floral qualities in a good green chile!

I tried this today but instead made a burger and gravy dish with the one you made on your swedish meatballs recipe and it turned out fire🔥🔥🔥

I'd be very interested/grateful for a full on veggie burger vid. Tried a few mixes, none of which have been particularly nice.
    PS. Really great channel, bud

I'm definitely excited about this recipe!! I was a vegan and I loved it, healthiest I've ever been. I want to slowly start eating a more plant based diet, so I feel like this is a good stepping stone recipe!! I think I am going to grind up my dark meat turkey though and leave my white meat to the smoker!

What's a good chickpea replacement, corn+ cornstarch slurry?

Mixing in silken tofu with beef for a lighter hamburg steak works, so definitely going to try chickpeas with meat.

    Hey Kenji
Would you also recommend using pork mince?

I like to mix in lemongrass, garlic, ginger, and then top it with hoisin and some quick pickle vegetables. Also mix in a bit of pork if I have it

Hi! I was thinking of turning these into meatballs - do you think it may work and how would you recommend I cook it (still in a pan or in the oven instead)?
