Pilau Cooking and How to Make Your own Pilau Masala

- On this video I demonstrate how to make Pilau dish which is a Kenyan favourite. I serve it with Kachumbari(tomato salsa with coriander) and raita(a delicious yoghurt and "cucumber sauce'')
It's a rice dish with meat and flavoured with spices. I start by showing you the specific spices used so that you make your own if you can't buy wherever you are. It's traditionally made with beef but you can also use chicken or lamb or goat meat. Hope this video helps you to know where you go wrong and how to make yours today.
Pilau Recipe
Serves:
Prep Time: 10 min
Cooking Time: 20-25 min
Ingredients:
• 200g Onion(Finely Chopped)
• 20g Garlic cloves(Crushed and chopped)
• 40g oil
• 3 Tbs Pilau Masala(or according to taste)
• 300gm Boneless Beef(tender and cut in small pieces)
• 2 Cups white Rice
• 3 Cups Hot Water
• Salt
Procedure:
1. Cook the onion and ginger on a medium heat with a suitable pot and allow to brown. Remember the medium heat as high heat will burn the onion giving the meal a bitter taste.
2. Add the meat and cook until it’s almost ready while the pot is covered. It should take about 4 min if the meat is tender and if not keep cooking until the meat is softened adding little water to simmer it.
3. Add the pilau masala powder and salt then give it a quick stir when the meat is dried out and allow the masala to cook for about 1 minute.
4. Add the rice and stir and ensure it's all mixed up.
5. Add hot water (3 cups), cover and bring to a boil. Reduce the heat and allow to simmer while covered.
6. After about 7 minutes of cooking, give the rice a stir to make sure the meat is mixed into the rice and cover. Repeat this while the rice is still wet and it’s just to ensure all the rice cooks evenly and doesn't stick on the bottom. Taste the rice and adjust the seasoning
7. Rice is cooked after about 13 minutes depending on the rice type and if it has dried up before it’s cooked, add a little water to steam it till cooked but not mashy!

Try
1.pre boiling the meat to make it soft (if you prefer)
2.add garlic when onions are softening almost brown then cook together till brown
3.add spices and paste before meat
4.when adding meat add some water (half a cup) and stir to let the meat absorb the spices
5.wash rice before starting to cook and let it dry
6.add water and stir then add rice and stir reduce heat and let it cook

I tried ur recipe from the scratch with just a lil adjustment on the measurements..I must say it turned out super good..so much of flavour in it..the rice cooked perfect.meat was yummy and soft. and the aroma of the spices when blended was just amazing..tq for the video..a big thumbs up👍..

GREAT RECIPE : you get the taste of the spices in the pilau. It is aromatic. The beef is tender and tasty. I made these adjustments: A) little more oil. I like mine a little bit wet and some shine. B) I add ginger. C) I add potatoes. Not too many. D) I roasted my spices a bit before grinding(Check Aroma of Swahili/Tanzania Food - Masala) E) I added some small chili pepper. (I want addl fire). F) I didnt cook with salt (I wish I did). My kuchamb. has lemon and salt so I thought I didnt need so much salt. Please add some. OVERALL, solid recipe. Plan to share with others when I cook for them.

Next time chef, please bring the camera to the pot so we can see the actual food cooking and how it all looks. Also it would hv been good to see the final product b4 u plated it and to have seen you serving it kwa plate and garnishing it with the kachimbari. Nice video, only that your camera was focused on yourself rather than inside the sufuria. The video should have at least shown the level of water for the meat to cook, the outcome of the meat after 2 minutes of cooking, how it looked after you put in the rice, the colour of the meal once you put in the water. Kindly do another one 😌.
