George said he created a padawan for him during these times so he can control himself more and turning himself into the more mature Anakin we saw in the revenge of the sith, his plan was also made her a very similar character to Anakin so they can relate to each other. That's why when he lost her, he also lost his control, she was supposed to be like a family to him he needed to protect. He was in need of a parent and he turned himself into one. Then he lost that figure and drawn to Palpatine even more because he provided a father/son relationship for him which Obi-Wan couldn't fully. The visions about losing his wife Padme was the latest hit for him, then he really lost himself because for Anakin it was always about finding a ''family'' and protecting them. He wanted to be more powerful because of them. In the end, he redeemed himself by saving his son. Great Irony... Filoni really explains this well with his speech in the Mandalorian documentary.
I always found it interesting how Ahsoka was probably the most intimately aware of Anakin dancing with the Dark Side and never said a thing other than a concerned glance until he did shit like this. I mean you could argue Obi-Wan did too but as close as they were I don't think they were nearly as close as Anakin and Ahsoka.
It's a very different dynamic when you're the younger one supposed to be learning. She can recognize something is wrong but doesn't have the experience to realize how out of line he actually is, because it's not like she's in these situations with other Masters very often to know what's normal and acceptable. It's basically how bad habits are taught. We see children just absorb what their parents do. And we see Ahsoka adopt some of Anakin's more aggressive habits as well. It's a dangerous situation for a kid to be in with him as a mentor.

She knew what he was like and she still wanted to be with him despite it. It’s just tragic that she wasn’t able to save him before he made his complete fall.
It’s mostly because Ahsoka has known Anakin since she was a young girl, and by now she trusts Anakin with her life. He trusts him make the right decisions, but she doesn’t hesitate to speak up when she knows he’s going too far.
I like how they just skip over Ahsoka's duel in the cockpit. She's at the point here where the audience can now just assume she can handle a non-force wielding opponent without incident.
