    This carrot cake is made without sugar and flour!
    You would never know that this simple gluten-free carrot cake is naturally sweetened! It's incredibly fragrant and moist, and it's topped with a maple cream cheese frosting.
    This carrot cake recipe is made with almond flour (no all-purpose flour is used).
    Made with almond flour, this moist, fluffy gluten-free carrot cake has the perfect classic taste and texture!
    This is hands down my new favorite carrot cake recipe and you won't believe that it is a healthy cake that you can feel comfortable eating.
    The cake is made with almond flour and crushed unsweetened coconut, which gives it a seriously tender texture (and makes it gluten-free and paleo friendly!).
    Ingredients:
    ½ cup of raisins
    3 medium-sized carrots
    2 large eggs
    1/4 cup maple syrup
    1/4 cup unsweetened applesauce
    1/4 cup milk or nut milk
    1/4 cup butter or a vegetable oil
    2 teaspoons of cinnamon
    1/2 teaspoon ground ginger
    1/4 teaspoon of ground cardamom
    1/8 teaspoon ground nutmeg
    3/4 teaspoon fine sea salt
    1 teaspoon vanilla extract
    1 teaspoon almond extract
    165 g almond flour
    40 g unsweetened desiccated coconut
    1 teaspoon of baking powder
    40g chopped walnuts or pecans
    Maple cream cheese frosting
    220 g cream cheese
    1/4 cup maple syrop
    Manual:
    Preheat the oven to 170 ° C. Grease an 8 inch baking pan. Line the pan with parchment paper
    Put the raisins in a small bowl and cover with warm water. Let's sit.
    Grate the carrots.
    In a large bowl, add the eggs and maple syrup and mix well with the hand mixer
    Then add applesauce, milk, butter, cinnamon, ginger, cardamom, nutmeg, salt, vanilla and almond. Mix until everything is smooth.
    Add the almond flour, desiccated coconut and baking powder. Mix everything together until incorporated.
    Drain the raisins and chop them well, then add them to the batter along with the grated carrots and nuts. Mix everything together until it's just incorporated (don't overmix).
    Scrape the mixture into the prepared pan and distribute it evenly. Bake until golden, about 45 minutes. Let cool for 10 minutes. Use the parchment handles to transfer the cake to a plate. Let the cake cool completely.
    Spread the maple cream cheese frosting evenly over the cake. If you want, sprinkle the top of the cake with chopped nuts. Chill the cake for 15 minutes or until ready to serve.
