Context for some of the talismen powers:
The Sheep Talismen allows the user's astral form to enter dreams; what's the old saying about counting sheep to help one fall asleep?
Rats were known to find ways into hollow statues, and the distorted noises they made along with their movements made it seem that the statues had come to life, or were possessed.
Sun Wukong, the Monkey King, mastered every method of shapeshifting into other creatures. Monkeys also tend to imitate others.
The Dog and Immortality relates to a story about how the dog tried to get immortality for mankind from God, but was thwarted by the frogs. The Noble dog is completing his mission for his best friend.
The Pig is the trickiest, but it may come down to how pigs are vulnerable to solar radiation, and control their exposure via mud bathing. Also, the talisman can allow the user night vision and the ability to see the unseen; pigs use their noses to find what cannot be seen.
Can you describe the other’s powers of history too?

You know in some versions of the myths behind the Chinese Zodiac Calendar, there is a cat that was left out of the Zodiac. I wonder if there is a hidden Cat talisman somewhere in the world of Jackie Chan Adventures waiting to be discovered.

My favorite talismans are the ox and the horse. The ox is my favorite because it has super strength and i love super strength. The horse is my 2nd favorite because it's like a magical version of vitamin C. It heals a lot of things and vitamin C is very similar to that or even almost the same, just not magically.
You failed to mention the sheep talisman also allows the user’s astral form to enter a person’s dream and also that the horse talisman can also repair broken objects so long as all the pieces are present.

I would not say that the Noble Animals was my favorite season, but Daolong Wong was my favorite villain and he was the villain for that arc.
I feel like the 8 Demon Sorcerers was my favorite arc, or maybe the Shadowkhan arc.

That's a really interesting thought! It would definitely be fascinating to see what kind of transformations a monkey could make happen.
In my headcanon, we never saw the full power of any of the Talismans, because they require practice to get to higher levels of their powers or they require experience or skill with magic.
In my headcanon, high level of skill with the Monkey Talisman could transform people into extinct or mythological animals (especially since dragons and mermaids exist in the Jackie Chan Adventures universe).
I also believe that the Monkey can allow you to change biological sex (after all Jackie was transformed into a female kangaroo, you can tell because he had a pouch, which only female kangaroos have), and other attributes (like hair and eye color, height, weight, etc...) since humans are animals too - this may even be stretched to allow you to shapeshift into the form of other people. Who knows, maybe at high enough levels of skill you could mix and match animals, transforming into chimeras or demihumans.
I wonder what powers would talismans based on the greek zodiac would have? Like an Aries talisman can return someone to their prime youthful age.

Of all of these I always felt that the pig was the only one that made no sense. I mean the rest you can kind of see the link between the animal and the power, but why would heat beam eyes be linked to a pig?

it has to do with the old saying "in a pig's eye"
I would argue that the pig's power should have been good luck or a bag of holding effect, one or the other.
Imho:
-Dragon and pig is not very useful if you don't usually fight.
-Tiger and sheep are very metaphysical (plus I wouldn't want to split in good and bad copies of me or leave my body defenseless)
-I don't think I want to give life to objects, so no rat.
-Horse, dog, rabbit, rooster and monkey would be the best.
-Ox and snake could be good but not as much.
to be fair, the tiger talisman only did that because it was broken, as a whole it will simply grant spiritual balance
I see the logic to all of this, but I do think you have underestimated the uses of the Rat.
Yeah for example if you use the rat to bring a toy of the genie from aladdin to life you could have your very own genie and three wishes. That would definitely be useful. Or you could use it to bring the fairy godmother from Cinderella to life and have your own fairy godmother who helps you acheive your dreams! @ArticBlueFox96

If you can bring any fictional or mythological figure to life, you can just create your own fictional character that is overpowered, omnipotent, and blindly loyal to you, and then bring it to life. That is immensely powerful. Though, we don't know if there are limits to what the Rat can bring to life.
I guess it could have been between the rat or dog . But then again they're all powerful .

For me
I would definitely choose the Horse and the Monkey.
I want to be able to heal from all pain, injury, and illness, including mental illness and aging (aging is a disease, but it is a different kind of disease), and I want to be able to heal others, and to fix any object (like a broken phone, or car, or house, etc...). I also see great value in the Monkey, as you can experience life from the perspective of any animal, gain that animal's abilities (such a flight for a bird, or sonar from a bat), also since humans are animals as well this talisman may be able to allow you change your attributes (like hair or eye color, or height and weight), or even change biological sex (after all Jackie was changed into a female kangaroo, you can tell because he had a pouch which is only present on female kangaroos). Who knows, maybe with enough practice with the Monkey, one could even transform into extinct or mythological animals (after all dragons and mermaids exist in the Jackie Chan Adventures Universe). A benefit of the Monkey is that you can share this ability by transforming others to what they wish to be (or if you are more wicked, transform people against their will, like turning your enemies into frogs or something).
As for the third Talisman, that is tricky, there are so many good choices. I guess I would narrow it down to between the Dog, Rooster, Rabbit, Rat, or Sheep.
I eliminate the Tiger, because spiritual balance, may have some application for enlightenment and wisdom, it is mainly meant to help the talismans work more coherently together (which I imagine is only an issue when you are working with more than at least five Talismans), and it can split apart your light and dark sides, which would make you unbalanced.
I eliminate the Snake, because I cannot see any positive use I would have for invisibility, it seems like its main applications would be for espionage, hiding, and playing tricks. Not to mention the Snake only makes you invisible, not inaudible or imperceivable. I feel like if I really want to be around without people knowing, the Sheep would be more useful, unless I was stealing something or needed to be physical for something.
I eliminate the Ox, because while super strength can be useful for accomplishing various tasks, I have no need of superhuman strength, machines and power tools can already do that. If I want to be strong, I can just build strength through resistance exercises, and since you build muscle through the healing process after you do micro damage to the muscle, I could just use the Horse to instantly heal from resistance exercise sessions, speeding up the process many times over. Additionally, since speed could be converted into other forms of energy, the Rabbit's superspeed could easily copy super strength if used right.
I eliminate the Dragon, because combustion and fire blast, have uses (fire is one of the greatest discoveries of humankind, allowing for heat, light, cooking, chemical reactions, smelting, communication, protection, weaponry, etc...), I could just use another tool to make and use fire and explosions.
I eliminate the Pig, because like the Dragon, it is use focused heat, useful, but easily replicable with lasers. Supposedly the Pig also allows you to see things that are invisible and to see in the night as well, but I have not seen much evidence of that in the show. Honestly, the Pig talisman should have been good luck or a bag of holding, not heat beam eyes.
suffocate, you are still very unlikely to die in general, and the Dog may offer invulnerability to injury and death and give one youthful energy, but I feel the Horse is overall more helpful. The Sheep's astral projection may have some spiritual benefits, but it mainly is for traveling the world as a ghostly being, you can fly, be invisible, be inaudible, be imperceivable, phase through solid objects, and I am sure all that is fun, but there is not much use there. Though the Sheep can communicate in people's dreams, and we have seen that with enough skill with the magic of the Sheep you can force others out of their bodies, and empty bodies can be possessed, so if you want to be a ghost possessing the bodies of others while leaving your own body vulnerable the Sheep is for you, but I think I will pass.
It is now down to Rooster, Rabbit, and Rat. The Rat is probably the most powerful out of these three, after all, you can give life or animation to anything and it will have its respective powers and persona, so you can bring a genie statue to life and have it grant you wishes, you can bring any fictional or mythological character to life, you could even create your own and then bring it to life, not to mention the possibilities of bringing drawing to life, or giving mobility to plants and other immobile things. There is however, the moral issue with bringing something to consciousness just to strip it away, which is only more complicated if you create something that is fine with having its consciousness stripped away. This is hard, but to avoid the moral issue, the Rat will be the next one I pass up (though I may change my mind).
So my choice is now between superspeed or levitation/telekinesis, both are awesome, so I think it comes down to personal preference. I am going with the Rooster.
So my final choice is Horse, Monkey, Rooster (though Rat and Rabbit came close to replacing Rooster).
I think I’ll go with dog, just for assurance that I can’t be killed, rabbit because frankly super speed is such dare I say a over powered super power with so many practical uses, and probably the dragon talisman so I’d have a long ranged attack.
Dog talisman is called invincibility, immune all lethal attacks.

If i understand this correctly you could use the horse, dog and tiger talismans together to gain absolute immunity against absolutely everything. Eternal life! Because that is what the tiger mainly does. He combines uncombinable powers!

I'm sorry but combining overwhelming speed with unbridled strength seems a bit out of control to me. And heat vision and fire breathing basically do the same thing. I don't know how these combos would be "useful".

If I was adapting the 12 talismans in another media, while I would keep most of the powers the same, there are some I would change to make them more useful or stand out more
Tiger - Reality warping (on a small scale, similar to the Reality stone in Infinity War)
Rat - Teleportation
Pig - Elemental Power (Similar to Aang and Korra only without the Avatar State)
Sheep - Mind Control
Dog - Includes force field projection
Dragon - Combustion for not only blasts, but also smaller blasts and heat vision
Monkey - Includes transformation into other people
you become powerful after that..haha
You can do all of that just combine 2 Talismans powers together then watch the magic happen.
Yeah the Tiger needs more presence. Though I am not sure if reality warping is the way to go there.
I feel the Rat already has presence, but Teleportation is a good idea for another power (though it may be redundant since the Rabbit has super speed).
The Pig definitely needs a new power besides heat beam eyes, I usually say it should have been good luck or a bag of holding effect, but control over elements (Fire, Air, Water, Earth, and maybe others depending on your elemental system, like Quintessence, Aether, Lightning, Light, Dark, Metal, Steek, Wood, etc...) is a good idea too.
I like the Sheep's astral projection, but mind control is probably a better power, though arguably the Sheep already can, since you can possess empty bodies and Daolon Wong was able to use the Sheep talisman to force others out of their bodies.
I like the idea of force fields for the Dog, but then the power of immortality should be combined with the Horse's healing.
Why not just have the Dragon be complete pyrokinesis.
I think the Monkey can already allow shapeshifting into the forms of other people, since humans are animals too.
I guess you are satisfied with the power of the Rooster, Rabbit, Ox, Snake, and Horse.
