Old Swedish lady here. Your version of meatballs looks good, I like seeing new interpretations of old recipes.
The version of classic Swedish meatballs I grew up with (and still make) were slightly different than these. For one, we blend the breadcrumbs (ordinary, not panko) with some water, milk or a splash of cream (depending on what's currently available) and let them sit and absorb the liquid before adding in the spices and an egg. Usually fresh finely diced yellow onion is used, fry it up quickly in some butter before adding it to the bread mix. The only spices used when I grew up were finely ground black pepper, white pepper and in some recipes (not mine) ground nutmeg. Salt to taste. Only once the bread/spice mix have soaked up all the liquid will you add the ground meat, usually 50/50 ground pork and ground beef. That way the spices mix more evenly through out the meat. Brown the meatballs quickly all around in butter in a hot frying pan, then allow to cook through in the oven. Sour Cream wasn't a big thing in 60's and 70's Sweden, at least not where I grew up, so Heavy Cream and/or milk would be used in the sauce, possibly along with some soy-sauce.
Of course this is the kind of recipe that every Swedish cook will have their own version of, all claiming to have the Right One, much like Spaghetti Bolognese in Italy, I guess. 🙂

Also the swedish meatballs are much smaller. I think pimento is also often used to spice this dish?
Thank you both for the inspiration!

@@bifurcation1531 I’ve never come across pimento in traditional meatballs, but I use that along with chilipowder and cayenne in my ”spicy version”.

Every one of these recipes look delicious. I've never added sour cream to my scalloped potatoes, I always add onions, but I am trying your recipe next time. The meatballs look scrumptious!!

It has been a week of "what to make for dinner" in my house (especially with one of my children and I both being down with a cold.) today I am slowly getting back on track with the meal planning. Thank you so much for the ideas we are going to make the ground beef bowls in May to see how the family likes them.

Great ideas. And they look so easy.
For potatoes, you can leave them sliced in water in the fridge for a few days. I learned this by mistake. I had cut some potatoes to make French fries but I didn’t have time to make them. So now I wash and cut and save the potatoes in the water for whenever I need them.

Oh my goodness the Buydeem brewer is exactly what I was looking for! My birthday is next month I'll use your link! I also mix in pork with beef when I make neat balls and they always turn out great. The other day I tried a grated carrot salad recipe and it was delicious. It had thinly sliced green apples and walnuts with a simple balsamic vinaigrette. You can also add raisins. As always, your recipes look amazing thank you for sharing! God bless and cheers from Ontario Canada. 💚🍃🌿

Haven’t had Swedish meatballs in a while, but I’m doing Salisbury steaks with a similar vibe. Chorizo tacos I think to use up some frozen chorizo brats. Scalloped potatoes are comfort food! Also love sheet pan and the beef teriyaki looks tasty and why not with the ground burger?!?!
