Lao Papaya Sauce | Padaek Sauce for Thum Mak Hoong

- All you do is boil and strain! With this sauce, it’s so easy to throw papaya salad together quickly. This thum sauce is very concentrated and only about a tablespoon is needed when making papaya salad. If you prefer more sweet, add sugar. If you prefer less salty, leave out the crab juice and mud fish or dilute with more water. Store in cool dry place. . . can also be refrigerated or frozen. Recommend cooking outdoors.
Ingredients
44 oz unfiltered fish sauce (2 bottles)
16 oz filtered fish sauce (2/3 bottle)
7 oz shrimp paste
8 oz crab paste
16 oz mud fish sauce
1/2 cup msg
3 oz palm sugar
14 oz tamarind seedless
2 cups boiling water (more for less salty)
27 oz soft shell crab
1 Tablespoon Dried Pepper Flake

I’ve not been very adventurous with it! However, the saltiness makes it pretty good in meat marinades.

Do you wait until it’s cool to put it in a jar?
I poured it in hot. I’m not really an expert on canning but I think the temperature of your jar should match the temperature of what you’re putting in the jar. 🙂 So if you’re using a cold jar, add cold food. If you’ve brought your jar to a high temperature then add hot food.
How long is it good for ?
The longest I’ve kept mine was 1 year. Stored in a cool and dry place.

The longest I've kept it is 1 year (unrefrigerated and kept in a dark, cool, dry place). And it was still good. :)
Great ingredients but ingredients could be adjusted. I can taste how sour this will be. We normally dont put tamarind bc it taste bitter when cooked. We add acidic when we are making thum.

Is this padaek only for thum or can I use it for larb gai?
Great question. I’ve used it larb and in other dishes that call for padaek. It’s more concentrated so you can use less.

How much do u use for say 2 cups of cucumber persay? And u still add the fish sauce and sugar etc?
For only 2 cups I'd use 1/2 or 1 tablespoon. Its concentrated and salty. So if you like more salty you shouldn't need to add anything. If you like salty, but want it less salty, just dilute with a bit of water until it taste how you like. If you like more sweet, you could add more sugar while cooking or when you're thuming. :)
