It's not the lack of updating that kills your saves, it is the updates themselves. ALFSP alleviates this, but there are still problems. When playing a non-creation-club modded playthrough, never start Skyrim from Steam, always start it from ModOrganizer (or equivalent)

There's a ton of great mods that add new lands, I'd love to watch a Skyrim video where you explore a new land. If you're looking for a suggestion "Beyond Skyrim: Bruma" would be a great place to start!
There's also a total conversion mod for Skyrim called Enderal: Forgotten stories that's free on steam for anyone who owns Skyrim or skyrim special edition. Download comes with it's own launcher and doesn't require downloading any additional mods.
