    Filipino cuisine is seriously underrated but it is stuff like this and people like francesca and her insightful knowledge of the culture that will help give Filipino food the a bigger audience.

      I would disagree. In recent years Filipino food has been super hype, and even before that Filipino food on the west coast has been big since there's so many freakin pinoys out here. Was it as hyped as japanese or korean food, nah. It's just that now, more pinoy chefs are embracing their culture and entering into the fusion realm. Also idk about everyone else but i grew up eating Salmon belly and head sinigang so this place is definitely not some rare, different than everyone else place.

      It's not underrated, it's just not good. Filipino food are bland with terrible combination of ingredients and seasons. I live with my Filipino girlfriend and her mom, and I never eat their cooking nor I ever enjoyed eating in Filipino restaurants. They need some serious culinary schools in the Philippines and redo all their dishes. They are way behind when compare to South East Asian food like Thai, Cambodian, and Vietnamese.

    I just tried sinigang not too long ago. It was so flavorful and really delicious 😋 now I have to learn how to make more filipino foods.

    Foreigners usually dont like Sinigang bcoz of the sour taste.. But for me its the best, especially Sinigang na baboy. Next is Sisig ❤️.. Well thats me. My own opinion. 👌

    What I particularly like about this episode is that it features the best of Filipino-American food while highlighting the Filipino-ness of the culinary style and flavors. For example salmon collar, it's actually not that easy to find in the Philippines compared to salmon heads or salmon belly, but the preparation here is exactly how we would have done it in the Philippines so the ingredient is very Pacific Northwest but the method is so Filipino. I'm glad Eater highligted this because in the Bad Saint episode, Eater highlighted the soft shell crab (not Filipino) in the byline, rather than the aligue (crab tomalley or crab fat) which the Fil-Am chef himself highlighted in the video as the key Filipino ingredient in the dish.

    The season changed and of course comes the runny nose and the deep, rib aching coughs. I seriously couldn't breathe out of my nose, my throat hurt and I sounded like Harvey Dangerfield. One bowl of the sinigang and I could breathe again. Best medicine for any and every ailment.

    I just ate here last week on mu lunch break. Atey lei calls me Tisoy. I have no clue what it means. Haha. I gotta say, the soup broth is hameyzing.

      Tisoy is an informal demonym for the spanish word "mestizo" which is how we refer to FIlipinos of mixed ancestry (usually spanish). For some weird reason, some Filipinos use the word to refer to any white person.

    Filipino food it's such diversity of flavors and when lola cooks it's from the heart and sometimes second and third generation pass it on to them!!! They're one hidden gem of cooking!!! Proud FILIPINO RIGHT HERE!!!

    This was a fine overview of the famous Oriental Mart...even had a couple of shots of Joy who never gets interviewed. 😂 Big fan of "do you trust me" plates when I'm in a joint like this. Another excellent Halo Halo episode. 👍

    Grilled Salmon Collar is even better. If you have the chance to go to Davao, Philippines, you MUST get it.
    You can also have sinigang with miso paste. It makes the soup white and has a unique smell and taste. Try it once. It also negates some of the sourness.

    I remember back in the late 80's when we first moved and settled in Seattle (well, Bellevue to be exact), salmon collars and bellies were free and the fish vendors were just very glad to give it away. My wife and I together with our young kids would travel there on a weekend and get some of those for our sinigang and paksiw. Then the Vietnamese came and started buying the stuff in bulk and from that day on, nothing was free :(

    So glad to see you are still open at Pike's Place. There used to be several Filipino farmers in the area selling their produce way back in the 1960s when I first arrived in Seattle, but now lives across the country. My aunt and cousins had been there with my aunt's husband a member of the Manong Generation or among the earlier Filipinos there who settled back in 1929.. But I remember there were farm owners who grew strawberries, raspberries and other vegetables. I'll come and have some of sinigang and fried salmon collar when I visit my daughter who lives there. MABUHAY to you and your store. Happy cooking Filipino dishes!

    My mom usually shallow fries the salmon before she puts it in the sinigang. It helps with bringing out the salmon taste more and the fishy smell.
    People should also try salmon head sinigang with miso. Absolutely amazing - especially the cheek and eyes 😋

    I am a travel nurse and I often work in Seattle. My grandma used to cook the best sinigang. To get my fix, I went to Oriental Mart at PPM! I need to go back to Seattle soon!

    I went to Seattle for the first time in 30 years! Saw this Filipino restaurant on UA-cam and was excited to try it but they were closed in March😥 sadly, I don’t think I’ll be back to Seattle for a while.

    I visited Pikes Place in 2018...but was so full by the time I passed by the Oriental Market...that I couldn't buy anything.
    Hopefully I get to visit again.

    Sinigang's taste can differ depending on every people who tasted it. The first time i tasted sinigang is kind of magical, first sip didn't quite like the sourness but I'm still curious about the taste so i tasted a second time and then the third time and then i realized that i have finished the whole bowl of sinigang. Can you imagine it?!

    Always visit and eat in that place whenever we're docked in Seatle when i was working on a cruise ship (NCL) i think if i remember those folks originally were from Malolos Bulacan same province as mine.

    Used to eat here all the time when I lived in Seattle. I honestly though due to all of the gentrification Seattle is going through it would be gone. Glad to see it's around still.

    This video is well made. Short n concise. I live here in SOCAL, specifically by West Covina. The area is specially the main street by AZUSA N AMAR is Little manila. Every corner of the quadrant is dominated by Filipino businesses specially eatery. In the early 90s there was one or two of those places now its like if you close your eyes on a muggy day it feels like your just in Manila😎

    I use head and salmon belly for sinigang since they are cheap here. if you have larger collar and belly pieces, they make good teriyaki.

    we sell Sinigang na Salmon (Salmon stew) in our "Karinderya" (filipino street restaurant). Sinigang using Salmon is kind of uncommon because filipinos usually use pork when cooking Sinigang. my mom was just experimenting on the menu when she tries to sell it just for one day. but later that day the locals who ate started saying compliments about the Sinigang na salmon and that they will come back tomorrow to eat sinigang na salmon again.Now it has been our best seller, and our restaurant became known all through the village for our Sinigang na salmon.

    In the South of the Philippines they use Tuna for their Tuna Sinigang which is the best.
