i made this today. And i must say it was wonderful. i followed the recipe exactly except i added some fresh thyme and i cut up my pepper and cooked it down with the onions for a kick. Awesome recipe.

it's a glazed earthen-pot.. I believe it was made in Mexico.Kinda like terracotta, but glazed on the inside. Great for even cooking as I like the way it distributes and maintain the heat.
the taste won't be the same with water as the coconut milk adds a lovely layer of flavor. Yes you can use chicken stock, but note that it will not be vegetarian/vegan from that point . * If using stock, keep in mind that the store-bought ones will be loaded in sodium so adjust the salt you add accordingly

allspice is one berry.. so you can get it whole or ground. It's also called pimento berries in jamaica
