At the prices the Aria charges, the staff should know what Mary's is. I've had exactly that dish at Salt & Ivy, and it's not bad (better than Aria's old cafe) but not amazing - generally, chicken & waffles are disappointing more than they're great. All in all, the Aria has become a prime example of Vegas casinos charging too much for average things, from the middling food to rooms that I can only describe in cowboy terms as "rode hard and put away wet." It was my go-to casino for years, mostly because of location, but no more.
Mary's chicken is a California organic free range chicken. I eat this chicken all the time and I agree it's really nothing special. Enjoyed your segment here and I will pass next time in Vegas. Happy holidays Danny !
Mary’s is a brand of organic, free range chicken, vegetarian fed and humanely handled. I buy it at Whole Foods here in California. That waffle looked delicious.
The syrup goes on the waffle. Pieces of chicken go on the syrupy waffle. Hot sauce goes on the chicken. Get a bit of each on the fork and into the mouth . A bite of bacon at the same time can be good - so I guess they thought it would be more efficient to put the bacon in the waffle. Does not sound like it was working for you. Try it again somewhere cheaper - or better. I hear there is a couple good places in Harlem. If they have spicy chicken or Hot chicken - you won't need the hot sauce. Oh the greenery - maybe they just trimmed the foliage and needed a way to dispose of it? Thanks for sharing your feelings!

I actually enjoy dining at Salt and Ivy. Yes, it's pricey. But that's Vegas. You can find cheaper places, but I don't visit Vegas to eat at a Denney's. People will pay a premium to eat organic chicken. Not me. So I will often order Eggs Benedict. But I don't mind paying a few extra dollars for good food and excellent service.
