Long ago the Museum of Science and Industry in Chicago had a number of very large extremely well done U.S. Navy warships. Most or all of them seem no longer on display, but they now have a very large room with a vast number all manner of ships from all periods. Of course, their most impressive display is the U-505 submarine that is now displayed indoors.
1:72 was probably selected because there are so many model airplanes in that scale. So it is a practical choice to make a big model, where one made around 1:48 scale airplanes might have been too big an aircraft carrier model.
Why estimate when you can do the maths? She's 1123 feet long. Multiplying that by 12 gives you 13476 inches. Divide that by 72 scales it down to 187.16 inches. Divide that by 12 gives you 15.59 feet.
