Ingredients
2 tablespoons olive oil
1/4 cup minced onion
1 cups Carnaroli rice (do not rinse)
4 cups cans chicken stock (stock not broth)
1/4 cup grated Pecorino Romano cheese
2 tablespoons butter
Kosher salt to taste
Notes
-For a vegetarian risotto replace the chicken stock with vegetable stock.
-Use a pot with rounded inside corners to keep the rice from sticking
-Do not cover the risotto with a lid while cooking
